This crock pot steak soup is a complete meal all in one bowl! You’ve got your protein, your veggies and your starch. It is rich and thick and the perfect way to warm up on a cold winter’s night. And the crock pot makes it so easy to make.
Ingredients
- Steak. I use top round steak but you could also use bottom round, beef stew meat, sirloin steak or a chuck roast.
- Flour. This is used as a thickener, could replace with cornstarch if needed.
- Seasoning. Salt, pepper, paprika, marjoram, parsley, bay leaf.
- Oil. I like to use olive oil but you could also use canola or vegetable.
- Potatoes. Russet potatoes hold up better in the slow cooker.
- Carrots. I always peel them but you can leave the peel on if you prefer.
- Tomato Paste
- Corn. I use canned corn but frozen corn will also work.
How to Make Slow Cooker Steak Soup
- Cut meat into 1 inch beef cubes.
- Mix together salt, pepper and flour into a large plastic bag. Add in cubed meat and shake to coat.
- Heat oil in a large skillet over medium-high heat. Add steak and cook until lightly browned on all sides.
- Stir together all the remaining ingredients except corn into a slow cooker.
- Add in steak.
- Cook on low for 8 hours or until veggies are tender. Add in corn before serving.
Tips
- I browned the steak before putting it in the slower cooker, but honestly you could skip that part if you are in a hurry. Then you put everything into the slower cooker except for the corn.
- I like to add that at the end so it doesn’t get too mushy. The carrots and potatoes come out perfectly and the tomato paste gives the steak soup a nice rich flavor.

- 1 16 oz. whole kernel corn
