These mini apple pies are the perfect taste of fall and the easiest apple pie you will ever make. The buttery streusel topping is used for the bottom crust and the topping! There is no rolling out pastry crusts!

It is the easiest apple pie you will ever make! Not only is it easy but it is delicious too. There is no pastry crust required.
This easy apple pie is similar to a French Apple pie and has a yummy crumb topping. Not only do you use the crumb topping on top, but you also use it for the bottom crust.
A friend gave me this recipe over 25 years ago and it is still the only apple pie recipe I use and one of our favorite desserts. I have a full size version of the recipe here but this small batch mini apple pie version is perfect when you just need a little bit of apple pie and not a whole apple pie!
Ingredients Needed
- All Purpose Flour
- Sugar
- Egg Yolk
- Baking Powder
- Butter, salted
- Apples
- Cinnamon
What kind of apples should I use in mini apple pie?
I prefer a tarter apple which compliments the sweetness of the mini pies. You want a nice firm apple that will hold up in the baking process. I always use Granny Smith apples but you can also use honeycrisp apples, golden delicious, Jonagold or pink lady.
How to Make Mini Apple Pie
- Preheat oven to 350 degrees F.
- Mix together flour, 1/2 cup sugar, egg yolk and baking powder together.
- Add in melted butter and mix until crumbly.
- Press 1/4 of the dough into each of the two 5 inch pie tins. (use half the mixture) Press evenly on bottom and up the sides of the pie tin.
- Slice, core and peel apples. Slice into 1/4 inch slices.
- Place apples into pie tins.
- Sprinkle each pie with half the cinnamon and remaining sugar.
- Crumble remaining dough on top of the apples, breaking into small pieces.
- Bake for 35-40 minutes or until apples are bubbly and topping is golden brown.
Pair This With:
- A scoop of vanilla ice cream or cinnamon ice cream.
- Drizzle with caramel sauce.
- A dollop of whipped cream.
Tips
- If you don’t have small pie tins you can purchase disposable foil pans at the grocery store and use those.
- You could also use a 4-5 inch baking dish instead.
- Be sure and slice your apples the same size so they cook evenly.
- If you want to slice your apples ahead of time, to prevent them from turning brown, put them into a bowl of cool water with a 1/2 tsp of salt for a few minutes and then rinse. They won’t turn brown!
Frequently Asked Questions
Do I have to peel the apples?
You don’t have to but I prefer peeling the apples. There are only two apples and you can quickly peel them with a paring knife.
How long will mini apple pie last?
You can keep them covered at room temperature for 2-3 days. You can extend that to 3-4 days by keeping them in an airtight container in the refrigerator.
Can I add nuts to the pie?
You can add in some chopped pecans or walnuts into the remaining crumb mixture before adding it to the top of the pie.
