Mini Apple Pie
These mini apple pies are the perfect taste of fall and the easiest apple pie you will ever make. The buttery streusel topping is used for the bottom crust and the topping! There is no rolling out pastry dough!

Ingredients

cup
all purpose flour
1/2
cup
sugar
1
egg yolk
1/2
tsp
baking powder

butter
melted and slightly cooled

apples
granny smith or other tart apple

tsp
cinnamon

sugar
Instructions
Preheat oven to 350 degrees F.
Mix together flour, 1/2 cup sugar, egg yolk and baking powder together
Add in melted butter and mix until crumbly.
Press 1/4 of the dough into each of the two 5 inch pie tins. (use half the mixture) Press evenly on bottom and up the sides of the pie tin.
Slice, core and peel apples. Slice into 1/4 inch slices.
Place apples into pie tins.
Sprinkle each pie with half the cinnamon and remaining sugar.
Crumble remaining dough on top of the apples, breaking into small pieces.
Bake for 35-40 minutes or until apples are bubbly and topping is golden brown.

Notes
If you don't have small pie tins you can purchase disposable foil pans at the grocery store and use those.
You could also use a 4-5 inch baking dish instead.
Be sure and slice your apples the same size so they cook evenly.
