Fingerling Potatoes

Fingerling Potatoes cooked with onion and garlic then topped with fried prosciutto are the perfect side dish to just about anything.

Some of our other favorite potato side dishes include these Smashed Potatoes, Cheesy Ranch Potatoes, Parmesan Roasted Potatoes and Spicy Potatoes.

What are Fingerling Potatoes?

 A Fingerling Potato is a small, stubby, and finger shaped. They have a nice thin skin so they do not need to be peeled.

They can be hard to find so if you are unable to find fingerling potatoes you could use small yukon golds or small red potatoes, just cut them in half or in quarters depending on their size.

What is Prosciutto?

Prosciutto is a paper thin Italian ham.  It is typically served uncooked but for today’s recipe I cooked it just like I would bacon for a nice crispy result.

How to Cook Proscuitto

Prosciutto doesn’t have much fat in it, unlike bacon, so use a little olive oil in the frying pan along with the prosciutto.

Cook until it is nice and crisp and then break it into pieces.

You could also substitute regular bacon for the prosciutto but I love the thin, crispiness of the prosciutto and it just seems so much more sophisticated than bacon.  I also dislike the fatty part of bacon which prosciutto doesn’t have.

How to Cook Fingerling Potatoes

  • Boil the potatoes until they are tender and then drain
  • Cut potatoes in half
  • Fry prosciutto in olive oil until crisp and remove from pan.
  • Add onions to the olive oil that is left from frying the prosciutto and cook until soft
  • Stir in garlic and cook for a minute

  • Add in potatoes, prosciutto, salt and pepper
  • Add in additional olive oil or some butter if necessary to prevent potatoes from sticking
  • Stir until potatoes begin to brown bit around the edges.

Make A Head Tip for Potatoes

  • Boil potatoes the night before or earlier in the day. Store in refrigerator until ready to use. If the potatoes are chilled when you beginning cooking, they will take a bit longer to cook.
  • Cook prosciutto ahead of time and store in an airtight container.
  • Serve these potatoes are delicious warm or served at room temperature.

  • Crock Pot Balsamic Beef
  • Teriyaki Beef Marinade
  • Dijon Mustard Chicken

Fingerling Potatoes with Prosciutto

Ingredients

  • 1 lb. fingerling potatoes
  • 1/2 lb. prosciutto
  • 2 Tbsp olive oil
  • 1/2 cup green onion chopped
  • 3 tsp garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
