These Steak Tacos are tender and full of amazing flavor. They can be grilled or cooked on the stove top and then just add your favorite toppings!  A perfect weeknight meal or fancy enough to serve to guests.

Why You’ll Love This Recipe!

One of my favorite restaurants to visit each time I go to Utah is Costa Vida. Nine times out of ten I get their steak tacos, they really are the best steak tacos. Recently I was invited to a blogger night at the restaurant and they shared with us their steak taco recipe. I was so excited!!I

I couldn’t wait to try them out at home and they are just as delicious when I make them at home as when I had them in the restaurant.  Besides being delicious, they are super easy to make at home.

Ingredients Needed

  • Sirloin steak. (See below for more suggestions).
  • Olive oil
  • Garlic
  • Jalapeno
  • Salt
  • Cumin
  • Chili powder
  • Limes
  • Flour tortillas
  • Lettuce 
  • Pico or salsa
  • Cilantro

Leigh Anne’s Tips

  1. A good steak. I used sirloin steak and I highly recommend it.  The steak is marinaded in a mixture of olive oil, garlic, salt, cumin, chili powder, and jalapeño.  The meat is tender and full of amazing flavor.  
  2. Grill your meat. I grilled the meat on my BBQ but you could use a grill pan inside as well.  Be sure to not overcook the meat.  I cooked ours to medium, you want some pink in the middle, it makes the meat more tender.
  3. Use a good tortilla. The other part of the Costa Vida taco that I love is the tortilla. They make their tortillas fresh all day long.  The best and easiest way I have found to duplicate that at home is to buy the uncooked flour tortillas at the grocery store.  They also carry them at Costco.
  4. Top tortilla with cheese. At Costa Vida they make the flour tortilla and then top it with some cheese and put the tortilla in the oven to melt the cheese, so that’s what I did too.  I used a Mexican cheese blend.

How To Make Steak Tacos

  • Combine olive oil, garlic, jalapeno (I used half of it), salt, cumin, chili powder and juice of 2 limes.
  • Add steak to marinade mixture and make sure all pieces are well coated.
  • Marinate in the refrigerator for at least 2 hours. (use a bowl or a zippered plastic storage bag for marinating)
  • Discard marinade and heat up the grill.
  • Cook steak to desired doneness (I like it medium)
  • Let rest for a few minutes and then slice meat against the grain into strips.

  • Cook flour tortillas and sprinkle with Mexican Blend Cheese and put in oven to melt cheese. If you are using precooked tortillas just sprinkle with cheese, place on a baking sheet and put into oven to melt cheese (350 degrees F)
  • Add meat to tortilla and top with lettuce, cilantro and pico or salsa. (Avocado, red onion, cotija cheese and radishes are not used by Costa Vida, but would be delicious on the tacos)
  • Squeeze fresh lime juice over the top.

What is the best meat to use for Steak Tacos?

Costa Vida uses sirloin steak. One of the benefits of sirloin steak is that it is a more tender cut of beef and doesn’t need to marinade too long. You could use skirt steak or flank teak but they are a tougher cut of meat and would need to marinade for longer, I would recommend overnight. If you don’t have that long to marinade you could also use a Rib Eye or a New York steak which only needs to marinade a few hours. I highly recommend using sirloin steak.

Can I use corn tortillas instead?

If you prefer a corn tortilla go ahead and use it, the tacos will still be delicious!

How to store and reheat steak tacos

Store any leftover taco meet in an airtight container in the fridge for 4-5 days.
Reheat the meat in one of three ways:
Microwave:  Place steak on a microwave safe plate, cover with a damp paper towel and microwave in 30 second increments until heated through.
Stove top: In a skillet, heat a tablespoon of oil. Add steak and cook for a few minutes until heated through. Be sure not to over cook.heat one tablespoon oil or butter in a skillet over medium heat. 
Oven:  Place steak on a baking pan, cover with foil and reheat in a 350 degree F oven for 10-12 minutes or until heated through.

  • 1 Tbsp. minced garlic
  • 1 Jalapeno minced (I used half)

  • 2 Tbsp chili powder
  • 2 limes juiced

    We ate at Costa Vida and was so impressed that I came home and immediately aearched for this recipe. Wow, this was so good and flavorful. I used chuck steak and marinated for 24 hours. Sliced thin across the grain it wasn’t rough at all. Thanks for the delicious recipe.

    Thanks!! These look amazing!! We don’t have Cafe Rio in NV either, and I always hear about how good it is. I’ve never bought those uncooked flour tortillas at Costco ~ although I’ve thought about it! Would you tell me if they freeze well and how to freeze them ~ if you’ve done that. Thanks!
