Ingredients Needed
- Quinoa. You could also use brown rice or lime cilantro rice.
- Pulled Pork (recipe below)
- Roasted Sweet Potatoes
- Fresh Pineapple
- Monterey Jack Cheese
- Cherry Tomatoes
- Green Onions
- Coleslaw Mix
- Coleslaw Dressing
- BBQ Sauce. My favorite brand is Sweet Baby Rays.

How to Make a Pulled Pork Bowl
Start with a grain. You can use rice or quinoa. I’m a big fan of quinoa and love to make a big batch and keep in the refrigerator or freezer to pull out and use whenever I need it. You can do the same thing with rice too.
Choose your protein. This is the perfect opportunity to use any leftover meat such as steak or chicken but I love using the recipe below for pulled pork to use in my bowl. The recipe makes multiple servings and it freezes beautifully. Freeze the pulled pork in smaller batches so you can pull out just what you need, when you need it.

Roast some veggies. Again, this is the perfect opportunity to use up whatever leftover vegetables you might have. If I don’t have any leftovers I like to roast up some vegetables such as broccoli, sweet potatoes, zucchini, asparagus and add it to my pulled pork bowl Some fresh cherry tomatoes add a punch of color and flavor too.
Add something sweet. I like to add something sweet like mandarin oranges or fresh pineapple to my bowl.

Add some crunch. One of my favorite ways to add crunch to my pulled pork bowl is with coleslaw. I buy one bag of premade slaw mix at the store and just add one jar of delicious Litehouse Coleslaw dressing for a quick and easy coleslaw. The dressing is thick and creamy, perfect for a delicious coleslaw in a matter of a minute or two!
Finish it off. Top off your bowl with some grated cheese, diced green onion and a generous drizzle of BBQ sauce. For this version, I used Monterey Jack cheese but whatever cheese you have on hand will work.

- Start with cooked pulled pork. If you don’t want to make it at home, you can purchase frozen pulled pork and simply reheat it with a little of its cooking juices or your favorite BBQ sauce to keep it moist and flavorful.
- Prep ingredients ahead of time. Chop the vegetables, cook the rice, and prepare any sauces earlier in the day. When it’s time for dinner, all that’s left is assembling the bowls.
- Use warm rice. Freshly cooked or reheated rice creates the best base and helps warm the other ingredients as you build your bowl.
- Mix up the grains. While rice is a classic choice, you can also use brown rice, cilantro lime rice, quinoa, or cauliflower rice to suit your preferences.
- Add plenty of texture. The best pulled pork bowls include a variety of textures. Pair the tender pork with crunchy vegetables, creamy avocado, crispy tortilla strips, or toasted pepitas for extra crunch.
- Customize the toppings. Set everything out buffet-style so everyone can build their own bowl. It’s an easy way to satisfy picky eaters and different dietary preferences.

Ingredients
- 4 cups cooked quinoa
- 4 cups pulled pork see recipe below
- 2 cups roasted sweet potatoes
- 1 cup fresh pineapple diced
- 1 cup Monterey Jack Cheese grated
- 1 cup cherry tomatoes diced
- 2 green onions diced
- 4 cups coleslaw mix
- 1/2 cup coleslaw dressing
- 1/2 cup BBQ Sauce
Pulled Pork
Instructions
- Combine coleslaw mix and dressing and keep refrigerated until ready to use.
- Place quinoa or rice in bottom of bowl and pulled pork
- Add all veggies and fruits, including coleslaw. Top with cheese and green onion and drizzle with BBQ sauce.
