Why You’ll Love This Recipe!

Today’s recipe for peanut butter pancakes is a fun flavor variation you are going to love. You can top them with some maple syrup and bananas or add some chocolate chips in for fun and even more great flavor. The addition of peanut butter is also a great way to get a little more protein in your diet.

  • Pour wet ingredients into dry ingredients and whisk together blended. Do not overmix.
  • Grease a non-stick griddle and heat. Be sure griddle is hot before adding batter. Sprinkle a few drops of water onto the griddle – they should sizzle, dance and evaporate.

  • Pour batter onto griddle and cook until bubbles appear on the surface and then flip. Cook on second side for a few more minutes.

How to Make Fluffy Pancakes

  1. Don’t over mix the pancake batter. Too much mixing causes the gluten protein to bond tightly with other gluten proteins which makes for a tough pancake.
  2. Flip the pancakes when tiny bubbles form and the edges of the pancake look slightly dry.
  3. Only flip the pancake once and don’t press down on it with the spatula.

We love to serve these pancakes with:

  • Banana slices
  • Peanut Butter
  • Honey
  • Maple Syrup
  • Strawberry Jam
  • Add in Chocolate Chips

Frequently Asked Questions

Can I use another nut butter?

Yes, almond butter, cashew butter or your favorite nut butter will work.

What is the best way to keep pancakes warm?

To keep them warm before serving, place them on a baking sheet in a single layer in a 200 degree F oven.

How long will peanut butter pancakes last?

Ie I think they are definitely best enjoyed fresh and warm but you can store leftover in pacakes in an airtight container or wrapped in plastic wrap in the refrigerator for up to 3 days. You can also freeze for up to 2 months. To reheat them.

How do I reheat Pancakes?

OVEN METHOD: Preheat the oven to 350 degrees F and place pancakes on a baking sheet in a single layer. Cover the pan with foil and cook for 5-7 minutes. You can also rewarm them in an air fryer

MICROWAVE METHOD:

Microwaving is easy but it can also make your pancake tough and soggy. You need to eat the pancake right after warming it in the microwave. Place it on a paper towel on a plate cook for 10-15 seconds per pancake. Don’t do more than 2 or 3 at a time.

Yum! I used almond/coconut milk and GF flour, threw in a super ripe banana, and tossed it all in a blender. What a tasty and easy breakfast treat!! The kids have already asked me to make it again.

We grew up eating peanut butter and syrup on our pancakes. We wouldn’t have thought about eating pancakes without peanut butter on top. So naturally, our children started eating theirs that way too. None of their friends had ever heard of it but they would try it and find themselves enjoying it too. Our daughter went off to college in Michigan and all her college friends ate peanut butter on their pancakes too. We realized that my dad grew up in Michigan and I grew up there in my early years. Must have been something that was started there.

I’ll definitely have to try this recipe with peanut butter in the batter.
