Butterscotch brownies are an ooey, gooey dessert you will love. These originated in the Nordstrom’s Cafe and were called a Nordy Bar.

I first enjoyed a butterscotch brownie back in 2008 when my neighbor Sheri’s brought them to a gathering. I ate half the plate and immediately requested the recipe. They are now a family favorite.Â
They aren’t just delicious, they are so easy to make and only require one saucepan.
This is a recipe is a copy cat recipe for a Nordy Bar. The name comes from Nordstroms and is a yummy treat they use to serve at the Nordstrom Cafe.Â
Ingredients Needed
- All Purpose Flour
- Butter, salted and softened
- Light Brown Sugar. For a deeper flavor use dark brown sugar.
- Eggs
- Baking Powder
- Salt
- Vanilla Extract
- Butterscotch Chips
- Semisweet Chocolate Chips
- Miniature Marshmallows
How to make Butterscotch Brownies
- Melt butter in a sauce pan over medium heat.
- Add butterscotch chips and brown sugar and stir continuously until melted. It will separate and look a bit strange but keep stirring.
- Remove from heat.
- Add eggs, and dry ingredients including flour, baking powder, and salt and stir until combined.
- Add vanilla and combine.
- Allow to cool.
- Stir in chocolate chips, marshmallows and nuts.
- Spread batter mixture into ungreased 9 x 13 baking dish. You can also line the pan with parchment paper for easy removal.
- Bake at 350 degrees F oven for 25 minutes.
- Remove and cool before cutting.
Tips
- As you melt the butter, butterscotch chips and brown sugar don’t worry if the butter separates out, just proceed forward and keep stirring. It will eventually come together.
- Be sure to allow the mixture to cool before adding in the chocolate chips and the marshmallows so they don’t melt.
- Wait until bars cool to cut. They will be soft and have a gooey texture when you take them out, but set up as they cool.

Do butterscotch brownies need to be refrigerated?
They can be stored at room temperature in an airtight container for 2-3 days. For longer, keep them stored airtight in the refrigerator for 4-5 days. They can also be stored in the freezer for up to 3 months.
Can I add nuts?
You can definitely add nuts. I would use chopped pecans or walnuts and add in about 1 cup.
How should I serve butterscotch brownies?
They would delicious served warm with a scoop of vanilla ice cream and some hot fudge sauce or caramel sauce on top!

Butterscotch Brownie
Ingredients
- 1/2 cup butter
- 1 12 oz. butterscotch chips
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 cup flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. vanilla
- 1 12 oz. semisweet chocolate chips
- 2 cup miniature marshmallows
Instructions

- Remove from heat, add eggs, flour, baking powder, and salt.
- Add vanilla and set aside and cool.

- Bake 25 minutes at 350.
- Remove and cool – they will be soft and gooey when you take them out – they will set up as they cool. Enjoy!

These are my absolute favorite bars! Once, when I was a teenager, I made them every day (!!!) for 2 weeks straight for my siblings and I. Gone every day! In my house they are called: Disappearing Marshmallow Bars!
