A Beef Gyro made in the Instant Pot or the slow cooker is a delicious and easy weeknight dinner idea. Serve with a creamy Tzatziki Sauce on pita bread.

This beef gyro is full of amazing flavor but the best part is how easy it is to make in the Instant Pot. It’s the perfect quick and easy weeknight dinner idea. If you are more of a planner, you can put it into the slow cooker in the morning and it will be ready when you are!
What is a Gyro?
Traditional gyros are a Greek Sandwich that is made with lamb or pork that is cooked on a rotisserie. It is served on pita bread and topped with tzatziki sauce. Since I don’t have a rotisserie or lamb, I figured out a delicious way to make it using beef my Instant Pot. The Instant Pot creates a tender and delicious beef.
Beef Gyro Ingredients Needed
- Flank steak. Sliced 1/4 inch thick
- Seasoning. Salt, oregano, garlic powder
- Beef Broth
- Lemon Juice. Fresh is best
Tzatziki Sauce Ingredients
- Greek yogurt. You can use any percentage of fat yogurt but I prefer the texture of a 2-5% variety.
- Garlic. Minced
- Red wine vinegar
- Salt and pepper
- Lemon juice. Fresh squeezed for best flavor
How to Make Beef Gyro in the Instant Pot
- Add meat, liquids and seasonings to Instant Pot.
- Lock lid into place.
- Turn the steam valve to sealing.
- Use the meat/stew preset cook time (30 minutes)
- Do a natural release.
Slow Cooker Version
- Place meat, liquids and seasonings into slow cooker.
- Put on the lid.
- Set to high for 3 1/2 – 4 hours or low for 6-7 hours.
How to Make Tzatzki Sauce
- Mix together ingredients.
- Keep refrigerated until ready to serve.
- Serve it over the beef gyro.

Ingredients
- 2 lbs. flank steak or beef roast sliced 1/4 inch thick
- 1 tsp salt
- 1 tsp oregano
- 1 tsp garlic powder
- 1/2 cup beef broth
- 2 Tbsp lemon juice
Tzatziki Sauce
- 1 cup Greek yogurt
- 2 tsp garlic minced
- 1 tsp red wine vinegar
- salt and pepper to taste
- 1 tsp lemon juice
Toppings
- tomatoes diced
- cucumber diced
- red onion sliced thinly
- 6-8 pieces pita bread

- Add meat, liquids and seasonings to Instant Pot. Lock lid into place.
- Turn the steam valve to sealing. Use the meat/stew preset cook time (30 minutes) Use a natural release.
- Serve meat along with tzatziki sauce, tomato, cucumber and red onion in pita bread.
Beef Gyro Slow Cooker Instructions
- Combine ingredients in your slow cooker. Cooking on high for 3 1/2 – 4 hours or low for 6-7 hours.
Tzatziki Sauce
- Mix together ingredients. Serve it over the beef, topped with tomato, cucumber and red onion on pita bread

My family all LOVED this recipe! I couldn’t find flank steak so I bought a little tri-tip roast that was already seasoned and marinating in the package. Since it was already seasoned, I left out the seasonings listed in the recipe. I followed everything else exactly. It was delicious! This will be a repeat at our house.
