This small batch cheesy potato recipe is the perfect amount for 2-4 people. You don’t have to wait for a holiday or a big family gathering to enjoy these crowd pleasing potatoes. They come together in minutes thanks to using frozen hash browns and they are delicious!
Ingredients Needed
- Butter. I use salted butter but unsalted butter will also work.
- Flour. This is used as a thickener.
- Milk. I usually have 2 percent but use what you have on hand. You could also use cream or half and half.
- Hash Browns. I prefer the cubed ones but you could also use shredded. Use fresh or frozen hash browns.
- Sour cream. You can substitute plain Greek yogurt also.
- Onion.
- Garlic
- Salt and pepper
- Cheese. We like to use cheddar but you could use your favorite – Swiss, Colby, Pepper Jack, Monterey Jack etc.
- Green Onion or chives.
- Panko Bread Crumbs. Can also use cracker crumbs or corn flake crumbs. The bread crumb mixture can also be left off if you prefer.
How to Make Small Batch Cheesy Potatoes
- In a saucepan, melt 2 Tbsp butter, whisk in flour and then stir in milk. Cook for a minute until it thickens. Remove from heat.
- In a bowl, combine potatoes, above flour mixture, onions, sour cream, 2 Tbsp melted butter, garlic, salt, pepper, cheese and green onions.
- Stir to combine.
- Combine 2 Tbsp melted butter and bread crumbs. Sprinkle on top of potatoes.
- Place mixture into a 8 x 5 inch baking dish.
- Sprinkle bread crumb mixture over top of potatoes.
- Bake at 350 degree F for 40-45 minutes or until heated through, bubbly and golden brown around the edges.
Tips from Leigh Anne
- Instead of bread crumbs I will sometimes use saltine or Ritz cracker crumbs. Crushed up corn flakes work well too.
- If you want to make cheesy potatoes more of a main dish, add in some leftover, diced ham.
Frequently Asked Questions
Can I make these ahead of time?
This is one of my favorite things about cheesy potatoes, they are a perfect make a head dish. Make them a day or two ahead and keep them covered in the fridge until ready to bake.
Can I freeze cheesy potatoes?
You can assemble the entire dish except for the bread crumb topping, cover with plastic wrap and foil and freeze for up to 3 months. Thaw overnight in the refrigerator, add the breadcrumb topping and bake.
What are they called funeral potatoes?
These are also called funeral potatoes because they are often served at funeral dinners along with ham.
Can I dice my own potatoes instead of using frozen potatoes?
Of course you can. It’s just a little more work!

- 1 1/2 Tbsp flour
- 1/3 cup milk
- 2 cups hash browns I like the cubed ones

- 1/2 tsp garlic minced
- 1/4 tsp salt

- 1/2 cup cheddar cheese grataed
- 1 green onion diced
