Cheesy Potatoes are also known as Funeral Potatoes at our house. But no matter what you call them, they are a delicious and an easy to make ahead side dish for any celebration or dinner.
What are funeral potatoes?
We have called cheesy potatoes funeral potatoes for as long as I can remember. They are called this because in our church, they are often served along with ham at family dinners following funerals. But whether you call them cheesy potatoes or funeral potatoes this is one recipe that has been a classic in my recipe repertoire for decades.
Ingredients Needed
- Potatoes. I use frozen cubed hashbrowns
- Sour Cream. You can substitute plain Greek yogurt.
- Cream of Chicken Soup
- Butter
- Garlic. Fresh, minced
- Onion. Minced or diced
- Salt and pepper
- Cheese. We like cheddar cheese but you can use Monterey Jack, Swiss, Pepper Jack etc.
- Cornflakes. This is for the crunch topping. You can also use bread crumbs or cracker crumbs.
- Chives. You can also use diced green onions.
Tips from Leigh Anne
- Cheesy Potatoes are so easy to make because they use frozen hash brown potatoes and it can be made ahead of time and kept in the refrigerator until ready to be baked. Another reason why this is the perfect side dish for the holiday!
- We prefer the cubed or diced frozen potatoes but you can also use shredded hashbrowns.
- Vary your topping, depending on what you have on hand. I have used panko bread crumbs, regular bread crumbs, saltine crackers, Ritz crackers and Corn Flakes. You can also leave the topping off if you prefer but I love the texture it gives the dish.
- Make this a main dish by adding in 2 cups of diced ham.
How to Make Cheesy Potatoes
- Place thawed potatoes in a bowl. If using frozen potatoes your bake time will be slightly longer.
- Add in sour cream, soup and 1/2 cup melted butter. Mix to combined
- Add in salt, pepper, onion, garlic, chives and cheese. Stir to combine.
- Place in a 9 x 13 pan.
- Mix crushed cornflakes or bread crumbs. with 1/2 cup melted butter. Stir to combine. Sprinkle over the top of the potatoes.
- Bake at 350 degrees F. for 40-50 minutes or until bubbly and golden brown.
- .Garnish with chopped chives or green onions.
Frequently Asked Questions
Can I make them ahead of time?
This is one of my favorite things about cheesy potatoes, they are a perfect make a head dish. Make them a day or two ahead and keep them covered in the fridge until ready to bake.
Can I freeze cheesy potatoes?
You can assemble the entire dish except for the bread crumb topping, cover with plastic wrap and foil and freeze for up to 3 months. Thaw overnight in the refrigerator, add the breadcrumb topping and bake.

Can I dice my own potatoes instead of using frozen potatoes?
Of course you can. It’s just a little more work!

Ingredients

- 1 cup sour cream

- 1/2 cup butter melted
