Small Batch Apple Crisp is the perfect, easy fall dessert. Perfectly delicious and just the right amount for two.
One of the biggest challenges of cooking for two is dessert. Most dessert recipes make way too much for just two people, 2 dozen cookies or an entire cake or pie. That leads to problems, you either eat way too much or end up throwing part of it away.
Thanks to this recipe, we are able to enjoy one of our favorite desserts and not be tempted to eat way too much of it.
If you are looking for a full size version of apple crisp check out this recipe.
Ingredients Needed
- Apples, I prefer a firm, crisp, tart apple like a Granny Smith Apple but you can also use a Honey Crisp or a Golden Delicious. These apples stand up well to baking.
- Sugar, granulated sugar and brown sugar
- Butter
- All Purpose Flour
- Graham Cracker Crumbs
- Old Fashioned Oats
- Nutmeg
- Cinnamon
How to Make Apple Crisp for Two
- Mix together your crisp topping. I like a lot of topping on my apple crisp so this is a generous amount. Use cold butter so that you end up with a crumbly mixture.
- Slice or dice your apple, either shape will work.
- Fill dish with apples slices. I use a 10 oz. ramekin and one apple per ramekin.
- Sprinkle each container with 1/2 tsp of sugar.
- Sprinkle apples with crisp topping. I like a lot of topping so the recipe makes a generous amount.
- Bake the apple crisp at 350 F until apples are baked through, about 20-25 minutes.
Tips from leigh Anne
- If you want to prep this dessert the day before, slice your apples and cover them in water with 1/2 tsp of salt. Let them sit for a few minutes and then pat them dry before using. This will prevent them from turning brown before baking.
- When slicing your apples, make sure all your apple pieces are a similar size so that they cook evenly.
- Cooking time will vary depending on how thick you sliced your apples. I cut my apples about 1/4 inch thick.

Hi; Love that you have recipes for 2. However; My apples came out MUSHY. Why? Should I lower the oven? Do slices instead of cubes? It is not good. I love applecrisp. All your dishes are great. How to revent mushy apples?? I want them barely baked thru. Thank you so much.

The type of apple you use and how thin or thick you slice it will definitely effect how mushy the apples. If you want them less mushy I would suggest using a crisp apple, and also cooking it for less time, the longer you cook it the mushier it gets.

Can you add some ALMOND PASTE?
Leigh Anne Wilkes says
I’ve never tried it

Made this with peaches instead and did the topping with all gluten free ingredients, and it was great! Love the graham crackers addition. Perfect size for 4 single serve mini ramekins. My husband said it was “next level”.

So glad it was a hit!

I noticed this recipe does not include the oats that you mention in the youtube video. Was that intentional? I love oats in my apple crisp, so I’m going to add them back in when we make this on Sunday. Thank you for the smaller recipes. They are perfect for our empty nest!

Thanks for catching that – I’ve updated the recipe!
