Why You’ll Love This Recipe!
This recipe is the perfect solution when you want or rather need a brownie but you don’t want to take the time to make a whole batch of brownies or you don’t need a whole batch.
This brownie is easier and better than anything you’ll make of a box and you can have a warm, fudgy brownie in under 20 minutes.
Ingredients Needed
- Butter. I use salted butter
- Sugar. Use a combination of granulated and brown sugar or you can use all granulated sugar.
- Vanilla Extract.
- Egg. We are only use 1 Tbsp of beaten egg. Save the rest for this single serve chocolate chip cookie.
- Cocoa Powder.
- Flour. I prefer unbleached all purpose flour
- Salt. If using unsalted butter, use two pinches of salt.
- Chocolate Chips. These are optional but I love the extra chocolate goodness they add. I use semi-sweet.
How to Make Single Serve Brownie Recipe
- Preheat oven to 350 degrees F.
- Grease a 4 oz. ramekin with non stick cooking spray.
- In a bowl, combine sugars and melted butter.
- Stir in vanilla, egg and pinch of salt.
- Add in flour, cocoa powder and chocolate chips. Stir just until dry ingredients are combined.
- Pour into prepared dish.
- Bake for 22-23 minutes.
Tips from Leigh Anne
- Don’t overmix. It’s easy to overmix small batch recipes and this can make your brownie tough. Mix by hand and only mix until dry ingredients are incorporated.
- Don’t overbake. I like my brownie slightly crunchy on the edges and nice and gooey in the middle. In my oven that is 22-23 minutes. Experiment with your oven to see the exact time that is best. If you want it more gooey, cook for less time.
- You can use all white sugar or all brown sugar if you prefer. I usually use a combination.
- I listed the chocolate chips as optional but I always add them! They make it more gooey.
Flavor Variations
- You can use white chocolate chips or butterscotch chocolate chips.
- Add a teaspoon of raspberry jam or peanut butter (or both) into the batter.
- Use some chopped nuts such as walnuts or pecans. About 1 tablespoon.
- Top with ice cream or whipped cream!
- Add a drizzle of chocolate syrup or hot fudge sauce.

This was just what I was looking for. It was fudgy, gooey and sweet. It might be too sweet for some, but it was exactly what I was craving. I prefer underbaked and ended up cooking it got about 21 minutes. Paired perfectly with vanilla ice cream. Thank you for this delicious new find!

This is a great recipe when you want a brownie treat that doesn’t leave any tempting leftovers. It’s rich, fudgy and deeply chocolate. The top was slightly crackled and chewy. I added chopped pecans instead of chocolate chips. The ramekin needs to be well greased. My brownie was baked in 20 minutes.
