Grilled Salad

I have cooked a lot of things on my grill.  Pizza, vegetables and last week we did grilled cheese sandwiches.  You can check out my Facebook page for pictures of the grilled cheese. If you aren’t a fan of Your Homebased Mom on Facebook – please become one!

But I have never grilled a salad – until last week!

The BBQ I had at my house last week was a potluck.  I provided the burger and sauces.  My guests were asked to bring a salad or a dessert.

Most people hold potlucks so they don’t have to do all the cooking and work.  I like potlucks because I always end up with some great new recipes!  Last week’s BBQ was no exception.

My friend Cathy called before to see if she could use the grill for her salad.  I didn’t even know you could grill a salad. Of course I was anxious to see what she was going to do!

Cathy used 3 different types of lettuce/greens:  endive,  radicchio and romaine.

After cutting the lettuce in half lengthwise it is brushed with olive oil

and then sprinkled with salt and pepper.

Then Cathy placed it right on the grill – have your grill at about a medium heat.  Turn the lettuce occasionally until they are crisp, tender and browned in spots.

Because I was busy playing hostess too I did not get a picture of what it looked like when Cathy pulled it off the grill but it has some nice grill marks on it.

Then coarsely chop the lettuce and toss in a bowl with the balsamic vinegar and the remaining olive oil.

It is so yummy.  I loved the warmth of the lettuce and the bite of the balsamic vinegar!

3 Tbsp olive oil

3 heads of Belgian Endive, halved lengthwise

1 large head radicchio, cut into 6 wedges

1 head of Romaine lettuce, quartered

salt and fresh pepper

2 Tbsp balsamic vinegar

Brush oil on lettuce and salt & pepper.  Grill lettuce turning occasionally until they are crisp, tender and browned in spots.  About 6 minutes.  Coarsely chop the lettuces then toss them in a large bowl with vinegar and remaining 2 Tbsp of oil.  Season he salad o taste with more salt and pepper.  Serve warm.
