We pretty much live by the motto of “Everything is better with bacon” at our house.
One of our favorite recipes to make this time of year, when the tomatoes are running rampant is bruschetta.
Sometimes it is our meal.
Tessa recently attended a dinner party where they served bruschetta as one of the appetizers and she came home raving about it. I of course emailed her friend’s mom for the recipe which is very similar to the one I always use but this one added in chopped black olives and capers so I gave it a try.
The bruschetta topping is a combination of fresh diced tomatoes, fresh sliced basil, olive oil, chopped black olives, capers and some salt and pepper. Mix it all together and refrigerate it for a while to let the flavors meld together.
Following our motto of “Everything is better with bacon” I decided to make the bruschetta better and add some nice crisp, crumbled bacon to the top of the bruschetta.
It was brilliant.
This mixture is served on some toasted baguette. I just slice the bread, brush with a little bit of olive oil and then place under the broiler.
Just top the bread with the tomato mixture and sprinkle with your crisp, cooked bacon.
Now the bruschetta really can be a complete meal – it includes a grain, vegetable and protein!!

- 4 Tbsp Olive Oil
- 1 Lg Tomato, chopped, about a cup or so
- 3 Tbsp fresh chopped basil
- 1 Tbsp capers
- 1 Tbsp chopped olives
- ½ tsp salt
- ½ tsp pepper
- 4-5 strips bacon, cooked until crisp and crumbled
- sliced baguette
- olive oil
- Mix all ingredients together
- The longer the mixture sits the more the flavors meld together.
- Slice bread, brush with olive oil and broil.
- Cook bacon until crisp and crumble.
- Top bread with tomato mixture.
- Add bacon to the top of tomato mixture.
