White Chocolate Peppermint Rice Krispie Treats

A favorite dressed up no bake Christmas treat, these White Chocolate Peppermint Rice Krispie Treats only takes minutes to make and are delicious! They are the perfect addition to your holiday cookie plate.

Why You’ll Love This Recipe!

Rice Krispie Treats are always a favorite at our house so I couldn’t resist this dressed up, holiday version. One of my favorite flavor combinations is white chocolate and peppermint so I knew combining the two with a Rice Krispie Treat would be perfection. A delicious, quick and easy, no bake treat!

Ingredients Needed

Marshmallows. I use mini marshmallows but you could use 80 regular size marshmallows instead. Use fresh marshmallows not ones that are dried out.

Crispy Rice Cereal. I prefer regular Rice Krispies cereal but you can also use corn flakes.

Butter. I use salted butter.

White Chocolate Chips

Peppermint Extract. Peppermint is not the same as mint. use peppermint extract for best flavor.

Candy Canes. You can also use crushed peppermint candies if you don’t have candy canes.

How to Make White Chocolate Peppermint Rice Krispie Treats

  1. Line a 9 x 13 pan or baking dish with parchment paper or lightly grease with non stick cooking spray.
  2. In a large, heavy pan melt butter over low heat.
  3. Add in marshmallows and stir until almost completely melted.
  4. Add in peppermint extract and pinch of salt.
  5. Place cereal in a large bowl and pour melted marshmallow mixture over the top.

  • When marshmallow mixture is almost totally combined with cereal add in white chocolate and stir a few more times. You don’t want the chips to totally melt.
  • Pour mixture into prepared pan and gently press down.
  • Sprinkle top with crushed candy cane and gently press into rice krispie mixture with hand.

How To Crush Candy Canes

  1. Remove the wrapper first
  2. Place candy canes in a zip loc plastic storage bag.
  3. With a hammer, rolling pin or a meat tenderizer smash the candy canes into small pieces.

Can I melt the marshmallows in the microwave instead?

Melt butter in microwave-safe bowl first.

Add marshmallows into bowl with melted butter and heat on med-high power in 15 second intervals, stirring between cycles until marshmallows are almost totally melted.

What’s the easiest way to cut Rice Krispie treats?

I like to use a serrated knife or a sharp knife for a clean cut. Cut them into 20 squares or any shape you like.

How Long Will Peppermint Rice Krispie Treats Last?

Stored in an airtight container peppermint rice krispie treats will last for up to a week.

White Chocolate Peppermint Rice Krispie Treast

Everyone's favorite rice krispie treat loaded with white chocolate and peppermint to make it a holiday favorite.
serves: 20 servings

Ingredients

  • 1/2 cup butter salted
  • 20 oz. mini marshmallows
  • 1/2 tsp peppermint extract
  • pinch of salt
  • 12 oz. crispy rice cereal
  • `11 oz. white chocolate chips approx. 2 cups
  • 3/4 cup candy canes crushed

Instructions

  • Line a 9 x 13 pan with parchment paper or spray with non stick spray or rub with butter.
  • In a large heavy pan, melt butter over medium heat.
  • Add in the marshmallows and stir until they are almost melted.
  • Remove from heat and add in peppermint extract and pinch of salt..
  • Pour in cereal and stir. When almost combined add in white chocolate and stir a few more times. You don't want the chips to totally melt.
  • Pour mixture into prepared pan and gently press down.
  • Sprinkle with chopped candy cane and gently press candy into rice krispies.
  • Allow to cool and then cut.
