How to Make Peach Crumble for Two

  • Spray ramekins with non stick cooking spray.
  • Peel and slice the peaches. Slice them 1/2 inch thick.

How to Peel Peaches:

  • Fill a large pan with water and bring to a boil.  Fill a large bowl with cold water.  Once water has come to a boil, add peaches to boiling water a couple at a time and leave in water for a minute or so.
  • Remove and put into cold water.  The skin should peel right off.  If it doesn’t leave in the boiling water for a little longer.  Then just cut the peach in half, remove the stone and slice!
  • In a small sauce pan, place 2 cups of peeled peaches along with 1 Tbsp brown sugar and 1 Tbsp granulated sugar pinch of salt and 1/4 tsp cinnamon. Stir to coat.
  • Over medium high heat, cook peaches until heated through and the sugar has begun to caramelize.

  • Serve with vanilla ice cream or whipped cream.

Tips from leigh Anne

  1. Be sure and slice your peaches evenly, about 1/2 inch thick. You want them all approximately the same size for even cooking.
  2. Use ripe peaches. This is the perfect dessert for peach season. I like to use a ripe, yellow peach for this peach crumble for two. The peach should be soft, not mushy. You can tell a peach is ripe when you gently press on it and it makes a slight indent with little pressure.
  3. If you want more crunch to your crumble add in a tablespoon of chopped walnuts or pecans.

Frequently Asked Questions

Can I double this recipe to feed four people?

Absolutely! You can bake it in an 8 x 8 Inch pan, the bake time will be a bit longer.

Can I use frozen peaches for peach cobbler for two?

You can use frozen peaches. I just recommend thawing them and draining off any excess liquid.

Do canned peaches work for this recipe?

I don’t recommend it as they have a lot of moisture and make for a soggy crumble

What other kind of fruit can I use?

You could use your favorite berry or a mixture of berries for this recipe if you prefer, no need to cook the berries before baking. Just add sugar mixture, stir to coat and add to ramekin.

I don’t have ramekins, what else can I use?

Use any type of small 3 cup baking dish or small cast iron skillet
