No Churn Strawberry Ice Cream

Ingredients Needed

  • Sweetened condensed milk
  • Heavy Whipping Cream
  • Vanilla Extract
  • Salt
  • Strawberries
  • Granulated Sugar, not pictured

How to Make No Churn Strawberry Ice Cream

  • Puree strawberries in a blender or food processor,
  • Combine strawberry puree with sugar in a saucepan.
  • Cook over medium high heat until the mixture boils.
  • Reduce heat and simmer until it reduces by half.
  • Place in the refrigerator to cool.

  • Whip heavy cream until stiff peaks form. I like to use my stand mixer with the whisk attachment for this.
  • Combine sweetened condensed milk, vanilla extract, salt and cooled strawberry puree in a bowl.
  • Fold strawberry mixture into whipped cream.

  • Pour ice cream mixture into a parchment paper lined 9 x 5 inch loaf pan. For a tutorial on how to line loaf pan, watch here.
  • Place in freezer until firm.

Tips from leigh Anne

  1. If you prefer, you can chop up the strawberries into small bites and just add them into the ice cream without cooking the mixture.
  2. Adding in some mini chocolate chips for more flavor and some fun texture.
  3. This recipe would be delicious with blueberries, raspberries or blackberries. If using a berry with a lot of seeds you may want to strain out seeds from half of the puree mixture

No, this recipe is designed to be no churn and made without an ice cream maker.

How long will no churn ice cream last in the freezer?

Stored in an airtight container it will last up to two months.

How is no churn ice cream different?

The main difference is it does not require an ice cream maker. Thanks to the sweetened condensed milk the ice cream is sweet and has a creamy, smooth texture. It also doesn’t freeze solid and hard but has a softer texture.

No Churn Strawberry Ice Cream

Ingredients

  • 1 14 oz. sweetened condensed milk
  • 2 cups heavy whipping cream
  • 1 lb. strawberries
  • 2 Tbsp granulated sugar
  • 1 tsp vanilla
  • pinch salt

Instructions

  • In a blender or food processor, blend strawberries until smooth.
  • In a saucepan, combined pureed strawberries and sugar. Bring to a boil and then reduce heat to medium and allow to cook until mixture reduces by half.
  • Set in refrigerator to cool.
  • In the bowl of a stand mixer with the whisk attachment or in a bowl with an electric hand mixer beat whipping cream until stiff peaks form.
  • In another bowl, combined sweetened condensed milk, vanilla extract, salt and cooled strawberry puree, mix to combined.
  • Fold strawberry mixture into whipped cream.
  • Put into parchment paper lined loaf pan, cover with foil or plastic and free until firm.
