In a blender or food processor, blend strawberries until smooth.
In a saucepan, combined pureed strawberries and sugar. Bring to a boil and then reduce heat to medium and allow to cook until mixture reduces by half.
Set in refrigerator to cool.
In the bowl of a stand mixer with the whisk attachment or in a bowl with an electric hand mixer beat whipping cream until stiff peaks form.
In another bowl, combined sweetened condensed milk, vanilla extract, salt and cooled strawberry puree, mix to combined.
Fold strawberry mixture into whipped cream.
Put into parchment paper lined loaf pan, cover with foil or plastic and free until firm.
Notes
If you prefer, you can chop up the strawberries into small bites and just add them into the ice cream without cooking the mixture.
Adding in some mini chocolate chips for more flavor and some fun texture.
This recipe would be delicious with blueberries, raspberries or blackberries. If using a berry with a lot of seeds you may want to strain out seeds from half of the puree mixture
