Make a Reuben Sandwich with corned beef made in the Instant Pot, it’s easy and delicious. This sandwich is as good as any restaurant version!

With St. Patrick’s Day around the corner and my need to eat corned beef at least once a year in tribute to my Irish ancestry, I decided to use the Instant Pot to cook it.
Ingredients Needed
- Corned beef brisket with seasoning packet
- Water
- Coleslaw mix. I buy the prepackaged coleslaw mix. You could also use sauerkraut or slice your own cabbage if you prefer
- Red wine vinegar
- Sugar
- Canola oil
- Salt
- Swiss cheese
- Thousand Island Dressing
- Rye bread or sourdough bread
- Butter
- Powdered Parmesan cheese. I use the kind in the round green container!
How to Make Instant Pot Corned Beef
- Place the meat into the instant pot on top of the steam rack that comes with the Instant Pot.
- Add 1 cup of water and sprinkle in the little spice packet that comes in the package.
- Set it the vent to sealing and press “manual” and then set it at 60 minutes at high pressure.
- Do a natural release on it’s own. I love the corned beef straight out of the Instant Pot. It is so tender and flavorful.
How to Make A Reuben Sandwich
- Make your coleslaw mixture by combining coleslaw, vinegar, oil, sugar and salt. Allow to sit for a few minutes for moisture to absorb.
- Toast your bread. You can leave it untoasted but toasting it takes it to the next level!
- Butter each slice of bread on one side.
- Sprinkle with powdered Parmesan Cheese.
- Place under the broiler and broil until it turns golden brown.
- Add corned beef to one slice of prepared bread and top with Swiss cheese. Place under broiler and allow cheese to melt.
- Top with coleslaw and Thousand Island Dressing and other piece of bread.

Instant Pot Corned Beef and Reuben Sandwich
Ingredients
- 3-4 lb. corned beef brisket with seasoning packet
- 1 cup water
- 2 cups coleslaw mix
- 2 Tbsp red wine vinegar
- 1 Tbsp sugar
- 1 Tbsp canola oil
- salt to taste
- 6 slices swiss cheese
- Thousand Island Dressing
- Sliced bread rye or sourdough
- butter
- powdered Parmesan cheese
Instructions
- Place corned beef in Instant Pot on steamer shelf.
- Add in water and seasoning pack.
- Put lid on Instant Pot in locked position with vent set to “sealing”.
- Pess Manual and then add 60 minutes of cooking time at high pressure.
- When finished cooking, allow a natural release.
- Remove corned beef and slice to serve.
For a Reuben Sandwich
- Combine vinegar, oil, sugar and salt and add to cole slaw. Stir to coat. Allow to sit fo a few minutes for liquid to absorb.
- Butter bead and spinkle with Parmesan cheese and place under broiler until golden brown.
- Added corned beef to one slice of prepared bead and top with Swiss cheese. Place under broiler and allow cheese to melt.
- Top with coleslaw and Thousand Island Dressing and other piece of bread.

I have not made this recipe although I’m working on it now but what I wanted to ask has anybody ever made Reuben quiche? My son is a lover of any quiche and last year after I made a corned beef and cabbage meal for St Patty’s Day I had leftover corned beef and I thought I’m going to try it so make a key at corned beef sauerkraut onion Swiss cheese one of the best quiches I have ever had in my life I make one a week for my son. A little tip if you’re going to do it make sure everything that has any liquid is drained and literally padded dry with paper towels because any liquid will make the quiche running. We won’t have time to cook my corned beef in the slow cooker this St. Patty’s Day. We love your recipes and trust your instant pot corned beef will turn out well. If instead of a reuben sandwich, I wanted to also do potatoes, carrots and cabbage, would I cook them afterwards in the beef juices? Any tips. Thanks!
