What is a Snack Cake?
A snack cake is usually a small one layer 8 inch square cake. They are perfect when you are craving cake but you don’t want or need an entire layer cake or sheet cake. It comes together in minutes!
Ingredients Needed
- Flour. I use unbleached all purpose flour
- Cocoa Powder. I prefer Dutch- processed cocoa powder.
- Baking Soda
- Baking Powder
- Salt
- Buttermilk
- Canola Oil
- Egg
- White Vinegar
- Pure Vanilla Extract
- Mini Chocolate Chips
How to Make Chocolate Snack Cake
- Preheat oven to 350 degrees F.
- Grease or line a 8 x 8 square baking pan with parchment paper.
- In a large bowl, combine flour, sugar, cocoa, baking soda, baking powder and salt. Whisk to combine.
- In a liquid measuring cup or a small bowl, add buttermilk, oil, egg, vinegar, and vanilla. Mix to combine.
- Pour liquid ingredients into dry ingredients and stir to combine.
- Add batter into prepared pan.
- Sprinkle the top of the batter with chocolate chips.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow cake to cool completely on a wire rack and then sprinkle with powdered sugar.
Tips for Making the BEST Chocolate Snack Cake
- Pan Size. You can use an 8 inch or a 9 inch square baking dish, the cake will not be quite as tall if using a 9 inch pan and may cook slightly faster. You can also use a 8 inch or 9 8 inch round cake pan.
- The cake is done when a toothpick comes out clean.
- Allow the cake to cool completely before adding powdered sugar or it will melt into the cake.

How long will snack cake last?
Keep it covered in an airtight container and it will last for up to 5 days. It does not need to be refrigerated.

If you are a nut fan, add a 1/2 cup of chopped pecans or walnuts into the cake batter.

Ingredients
- 1 3/4 cups flour
- 1 cup brown sugar packed
- 1/4 cup baking cocoa dutch processed
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup canola oil
- 1 egg
- 1 tsp vinegar

Instructions

You can make your own buttermilk by adding vinegar to your milk – 1 Tbsp vinegar to 1 milk
