Blueberry Zucchini Bread

Blueberry Zucchini Bread is a delicious, dressed up version of my favorite zucchini bread complete with a streusel topping.

Dressed Up Zucchini Bread

It’s that time of year.  That time when your garden is overflowing with zucchini.  This year I’ve been trying to stay on top of all the zucchini and not let them get too big.  I made a couple of batches of my regular zucchini bread this week but I decided I needed to make it a little more interesting.

I found that the addition of some blueberries and a streusel topping was the perfect way to dress up my regular zucchini bread.

One of the best things about this recipe is that it makes two loaves.  One for you and one to share!

Should I Peel the Zucchini?

That is totally up to you. It will not effect the taste of the bread if you leave it on. If you are trying to hide the zucchini, go ahead and peel it. No one will know they are eating zucchini bread if you take off the skin!

I grate my zucchini using a food processor but you can also do it by hand.

How to Make Blueberry Zucchini Bread

  • Grease bread pans. You can make two 8 x 4 loaves or 5 mini loaves.
  • Add flour, salt, baking powder, soda and cinnamon together in a bowl.
  • In another bowl mix together the eggs, oil, vanilla and sugar.
  • Add wet ingredients into dry ingredients. Mix to combine.
  • Stir in zucchini and fold in blueberries.
  • Pour batter into prepared pans.
  • Bake 40-60 minutes or until a toothpick comes out clean.
  • Add streusel topping about 10-15 minutes into baking time.
  • Cool in pan for 15 minutes and then remove bread from pans and cool on rack.

Other Zucchini Bread Add Ins

If using one add in, use 1-2 cups. If you are adding in a second one use 1 cup of each of the two add ins.

  • Mini Chocolate Chips
  • Coconut
  • Pecans
  • Pistachios
  • Raisins
  • Dried Apricots or Figs

Streusel Topping for Zucchini Bread

I have made this bread with and without the streusel topping and my favorite way by far is with the streusel topping.

Streusel topping is a combination of:

  • Flour
  • Brown sugar
  • Oats
  • Butter
  • Cinnamon

I like to add the topping onto the bread part way into the baking process, about 10 minutes in.

If you don’t have any zucchini in your garden ask a neighbor, they probably have lots to share!

Blueberry Zucchini Bread

Blueberry Zucchini Bread is a delicious, dressed up version of my favorite zucchini bread complete with a streusel topping.  This blueberry zucchini bread is better than any blueberry muffin you will find.

Ingredients

Bread:

  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 Tbsp cinnamon
  • 3 eggs
  • 1 cup canola oil
  • 2 cups sugar
  • 3 tsp vanilla
  • 2 cups grated zucchini
  • 2 cups fresh blueberries

Streusel Topping:

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter

Instructions

  • Grease bread pans – two 8 x 4 or 5 mini loaf pans.
  • Preheat oven to 325 degrees.
  • Add flour, salt, baking powder, soda and cinnamon together in a bowl.
  • In another bowl mix together the eggs, oil, vanilla and sugar.
  • Add in bowl of flour mixture and mix well.
  • Stir in zucchini and fold in blueberries.
  • Pour batter into prepared pans.
  • Bake 40-60 minutes or until a toothpick comes out clean.
  • Add streusel topping about 10-15 minutes into baking time if desired.
  • Cool in pan for 15 minutes and then remove bread from pans and cool on rack.

Topping:

  • Mix together until butter is well mixed in.
  • Sprinkle over the top of the bread about 10-15 minutes into baking time.

    Why did my blueberries sink to the bottom?

      Your blueberries may be denser and heavier than mine were. Next time try coating them in some of the flour from the recipe before adding them into the batter.

    I adapted your recipe to work in my lb bread machine. It got rather dry when the machine starting mixing/kneading so I had to add milk. The bread turned out great. Loving your blog.
