Peanut BUtter and Jelly Banana Bread

Peanut Butter and Jelly Banana Bread will remind you of your childhood. Delicious, moist banana bread loaded with peanut butter and jelly goodness.

I love banana bread and my moms recipe is the absolute best, so i decided to make a fun variation on our favorite banana bread and add in my favorite sandwich ingredients!

There is creamy peanut butter and crunchy peanuts in the bread as well as a swirl of strawberry jam and a strawberry jam glaze.

Peanut BUtter and Jelly Banana Bread

Ingredients

  • All Purpose Flour
  • Baking Poweder
  • Baking Soda
  • Salt
  • Vanilla Extract
  • Eggs
  • Bananas
  • Sugar
  • Vegetable Oil
  • Peanut Butter, creamy
  • Peanuts
  • Strawberry Jam

How to Make Peanut Butter and Jelly Banana Bread

  • Combine flour, baking powder, baking soda, and salt in a bowl.
  • Mix vanilla, eggs, mashed bananas, sugar, oil and peanut butter in another bowl. Fold in peanuts.
  • Add wet mixture to dry mixture. 
  • Stir to combine, do not over mix.
  • Pour batter into prepared loaf pan. 
  • Drizzle with 1/4 cup of the strawberry jam and swirl into batter with a knife.

  • Bake at 350 degree F for 70 minutes or until a toothpick comes out clean.  (cover with foil for last 15 minutes to prevent it from getting too brown.)
  • Cool in pan on a wire rack.
  • Remove from pan when completely cool.  
  • Heat remaining jam in a small pot up and brush over the top of the loaf before slicing.

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 2 eggs lightly beaten
  • 1 cup mashed bananas about 3
  • 1 cup sugar
  • 1/3 cup vegetable oil
  • 1/4 cup creamy peanut butter
  • 1/4 cup peanuts chopped
  • 1/3 cup strawberry jam

Instructions

  • Preheat oven to 350 degrees F.  Grease bottom of a 9 x 5 bread pan.
  • In a bowl, combine all dry ingredients, flour, baking powder, baking soda, and salt.
  • In another bowl, combine vanilla, eggs, mashed bananas, sugar, oil and peanut butter.  Stir to combine.
  • Fold in peanuts and add wet mixture to dry mixture.  Stir just to combine.
  • Pour into prepared loaf pan.  Drizzle with 1/4 cup of the strawberry jam.  Use a knife to swirl the jam into the batter.
