Amazing Flavor Combination: You can enjoy this brie with just the cheese and pastry or you can take it up a notch by adding in some fun flavor combos. The combination of brie, basil, bacon and peach has become a family favorite since we first had it on a waffle at one of our favorite Portland eateries. Initially it sounds like a strange combination but trust me, it is amazing! You can also come up with your own flavor combinations (See Tips below for more ideas)

Ingredients Needed
- Puff pastry, from the freezer section of the grocery store
- Brie round. I prefer a triple-cream brie.
- Bacon, crisp
- Fresh basil sliced
- Peach jam
- Egg
What is Puff Pastry?
This brie is wrapped in a layer of puff pastry. Puff Pastry can be made from scratch (it’s a lot of work) I prefer to use store-bought puff pastry which can be found in the freezer section of the grocery store. Puff pastry is a flaky pastry that is made from a laminated dough, or a dough that is made by alternating layers of butter and dough.
How to Make Baked Brie
- Allow the puff pastry to warm up a bit so that you can easily unfold it without tearing it.
- Place puff pastry sheet on a parchment paper lined baking sheet or dish.
- Place your wheel of brie in the middle of the pastry sheet. The brie will be covered with a “rind”. This rind is eatable and can be left on or you can remove it if you prefer. I always leave mine on
- Place your toppings on the top of the brie. Our favorite flavor combo is peach jam, bacon and basil. I use 1/4 cup of peach jam on top. I used my homemade peach jam but store bought will work fine.
- Top it with 2 slices of crisp diced bacon and 2 Tbsp of freshly sliced basil.
- Gently wrap the puff pastry around the brie. I make little tucks or folds in the pastry as I work my way around the brie.
- Pinch the pastry closed so your filling doesn’t leak out.
- Brush the puff pastry with an egg wash.
- Bake at 375 degrees F for about 20 minutes or until the cheese melted through and the puff pastry has turned a nice golden brown. Bake on a parchment paper lined baking sheet.
- Place on a platter and serve.
How to Serve Baked Brie
Use a sharp knife to cut into the brie and serve it with:
- Sliced baguette
- Crackers
- Vegetables. Carrots, celery or sliced peppers.
- Candied Pecans
If it has baked long enough, all that wonderful brie cheese will ooze out when you cut into it.
Be sure and get a little bit of all the flavors – brie, bacon, basil and peach for the full effect.
Tips from leigh Anne
I love to play around with different flavor combinations, adding in different nuts and fruits to my brie. Here are some of my other favorites.
- Caramelize diced apples or pears in some brown sugar and add in a bit of cinnamon.
- Top the brie with your favorite flavor of jam. Raspberry jam, strawberry jam, fig jam or apricot jam and brie are a great combo. A pepper jelly would be good too.
- Leftover cranberry sauce from Thanksgiving is delish on the brie!
- Caramelized onions with a few teaspoons of brown sugar or balsamic glaze added in and then put on top of brie.
- Top the cheese with some honey and add your favorite nut such as pecans, almonds or walnuts.
- Sprinkle the top of the brie with some fresh herbs such as fresh rosemary or fresh thyme.

How do I store leftover baked brie in puffed pastry?
Any leftovers should be stored covered in the refrigerator. You can reheat it in the microwave or in a 300 degree F oven.
Can I use something other than puff pastry?
Phyllo dough could be used in place of the puff pastry.
Can I make baked brie ahead of time?
The brie can be wrapped in pastry and kept refrigerated for up to a day before baking and serving. Keep it covered in the fridge. Brush with egg wash just before baking.

Baked Brie in Puffed Pastry
Ingredients
- 1 sheet of puff pastry
- 8 oz Brie round
- 2 slices bacon crisp
- 2 Tbsp fresh basil sliced
- 1/4 cup peach jam
- 1 egg beaten for wash
Instructions
- Preheat oven to 375 degrees
- Lay out sheet of puff pastry.
- Place round of cheese in the middle (rind may be left on)
- Top with jam, basil and bacon
- Bring up the edges of the pastry and work your way around making tucks in the dough.
- Press to make sure edges are sealed.
- Brush with beaten egg over top and sides
- Place on baking sheet and bake for 20 minutes or until golden brown

This is my absolute favorite baked Brie. It gets rave reviews every time I make it. I too cool mine a little longer (30-35ish) to get it a little more gooey. Fantastic flavor combination.
