I am in lemon heaven!

Initially I thought I would be able to try all the recipes but have realized that it is going to take me some time to get through them all.  I have decided to put all the recipes together into a little Lovely Lemon cookbook for you and it will be available for you to download here for FREE!  Just give me a little time to get them together.

Today’s Lovely Lemon recipe is for Lemon Dreams.

Lemon Dreams are a cute and yummy little sandwich cookie.  This recipe was shared by Anna Boyd.

The cookie is a made up of two very light, small sugar cookies with a yummy lemon curd mixture sandwiched in between.

The recipe calls  for a 1 1/2 inch cookie cutter which I didn’t have so I used my doughnut cutter.  The inside circle was the right size.  It made it a pain to cut out because it also cut out the doughnut circle which I didn’t need.

As you can see I’m not the best cookie dough roller outer!  I didn’t get it too even or smooth.  The recipe said to roll them 1/4″ thick but mine were a bit thinner than that but it just made for a crisper, lighter cookie which I liked.

The recipe says it makes 18 sandwich cookies but I found it made more like 24.

After making your cookies you fill them with a small spoonful of lemon curd (recipe included).

You want to be careful not to put too much curd in between or your top cookie will slide off.  I was a little stingy at first with my curd but that just meant that I had some left over which I could eat all by itself – yum!!

After filling and sandwiching all the cookies together dust the top of them with some powdered sugar.

They are a perfect bite size Lovely Lemon cookie – a Lemon Dream!

Just the right size for popping into your mouth – be careful not to pop too many!  You’ll be tempted!

Lemon Dreams
  • 1 C butter (softened)
  • ⅓ C powdered sugar
  • 1 tsp. vanilla
  • 1⅔ C flour
  • ⅔ C sugar
  • 1 ½ tsp. cornstarch
  • 1 tsp. grated lemon peel
  • ¼ tsp. salt
  • 1 egg (beaten)
  • 1 Tbsp.lemon juice
  • 2 Tbsp. water
  • 1 Tbsp. margarine
  • 1 ½ - 2 C powdered sugar
  1. Cream butter, powdered sugar, & vanilla.
  2. Add flour & mix till smooth.
  3. Roll out with powdered sugar about ¼” thick.
  4. Cut out with 1 ½” cookie cutter.
  5. Bake at 350 degrees for 12-14 minutes or until lightly browned.
  6. Cool. (Because I rolled mine out a bit thinner I only baked them for 10 minutes)
For filling:
  1. Combine sugar, cornstarch, lemon peel, & salt. Stir in water, egg, lemon juice, and butter.
  2. Bring to a boil and simmer for 2 minutes.
  3. Cool.
  4. Add powdered sugar.
  5. Put a spoonful of filling on one cookie and top with another cookie.
  6. Dust with powdered sugar.
  7. Makes approx. 1 ½ dozen.

    Made these last night and doubled the recipe. Soooo good. They are like a really good lemon bar in cookie form. I would recommend you chilling the dough for about an hour before rolling it out. Thanks for the recipe.

    I’m glad you liked these special cookies. My quest for finding this recipe started when I bought a cookie similar to this at a farmers market a few years ago in Indianapolis. It was the best cookie I had ever had,(and I’ve had a lot of cookies). So, I was on the lookout for a recipe, then I could make them myself, BAD IDEA!!! I found this recipe and it is similar but I can’t get it perfect :(

    Mmmmmmm. I made these for a party Friday and they were a hit! With the leftover filling I made sandwhich cookies out of mini nilla waffers, kids loved em!
