Funfetti Ice Cream Cupcakes are a fun way to celebrate!
Cake and ice cream are a must at every birthday so why not combine the two into an ice cream cupcake. Start with a box of funfetti cake mix and mix it up the cake mix according to the directions.
Line a muffin tin with cupcake liners. Then place about 2 teaspoons of cake batter in each one.
Bake for about 5 minutes or until a toothpick came out clean.
Let the cake cool and then fill the rest of each muffin tin with your favorite ice cream.
Guess what flavor mine is? Lemon of course! I used some lemon sorbet on half and some lime sherbet on the half of the cupcakes for a fun lemon/lime combination.
Pop them in the freezer and allow the ice cream to set up and get hard.
Then just remove the liner and top them with some whipped cream and funfetti sprinkles.
These ice cream cupcakes are just the right ratio of cake to ice cream! And of course the whipped cream and sprinkles on top makes it more fun to eat.
Just think how much fun you can have with all the Bold colors and mixing then and matching them with your favorite ice cream flavors. Go Bold!

Pillsbury Funfetti Bold Ice Cream Cupcakes
- 1 8.5 oz. Pillsbury Funfetti® Bold Cake Mixes
- 1/2 gallon of ice cream of choice
- Whipped Cream
- Funfetti Sprinkles
- Make cake mix according to directions on package.
- Line cupcake pan with liners.
- Place 2 teaspoons batter into bottom of each cupcake.
- Bake for 5 minutes or until toothpick comes out clean.
- Fill each with ice cream of choice
- Top with whipped cream and sprinkles.
