How to Make Peanut Butter Pancakes
- In a large bowl combine flour, baking powder and salt.
- In another bowl mix together peanut butter, sugar and oil until smooth. Add in egg and milk.
- Pour wet ingredients into dry ingredients and whisk together blended. Do not overmix.
- Grease a non-stick griddle and heat. Be sure griddle is hot before adding batter. Sprinkle a few drops of water onto the griddle – they should sizzle, dance and evaporate.
- Pour batter onto griddle and cook until bubbles appear on the surface and then flip. Cook on second side for a few more minutes.
Tips for Fluffy Pancakes
- Don’t over mix the pancake batter. Too much mixing causes the gluten protein to bond tightly with other gluten proteins which makes for a tough pancake.
- Flip the pancakes when tiny bubbles form and the edges of the pancake look slightly dry.
- Only flip the pancake once and don’t press down on it with the spatula.
