I remember a period of a couple of years when I had children in elementary school, middle school and high school. All at the same time! This meant we had three different school start times which lead to some pretty crazy mornings at our house. The first one left at 6:00 am (for a before school vocal group) and the last one headed out the door at about 9:15 am. The biggest challenge was getting everyone to eat breakfast. Some kids are just better breakfast eaters than others. I found for the older kids, the best way to get them to eat breakfast was to have something they could grab and head out the door with and eat on the bus or in the car.
Today’s recipe for Peanut Butter and Oatmeal Breakfast Bars is the perfect solution. The breakfast bars are packed full of protein with oats and peanut butter and other goodness such as dried fruit and nuts. They are easy to make and they are the perfect grab and go breakfast and also make the perfect after school snack. Now that school has been in session for about a month, cold and flu season has begun. They seem to go hand in hand and one of the best ways I have found to keep the kids and myself healthy and resistant to all the bugs out there is to make sure we start the day with a good breakfast, especially one packed with protein like these breakfast bars.
The breakfast bars are a combination of O Organics® old fashioned oats, rice cereal, raisins, dried cranberries and pecans. I love the OOrganics® line of products I find at my local Albertsons store. For many years, organic was synonymous with pricey, but, O Organics makes it affordable for everyone with great-tasting organic food at a great value.
The breakfast bars are held together with a mixture of O Organics® peanut butter, honey and some brown sugar.
Pat the mixture into a greased 9×9 pan and let them cool. Then just cut them into bars and they are ready to grab and go!
The oats and the rice cereal give the bars the perfect ratio of chew to crunch and you can add in your favorite dried fruit and nut combo for even more goodness.
If your family does manage to catch one of those cold or flu bugs going around be sure and check out your local Safeway and Albertsons and their exclusive line of effective and affordable wellness products known as Signature Care™.
O Organics products are available in my area at my local Safeway and Albertsons. You can also find them at all Albertsons Companies family of stores, including ACME Markets, Jewel-Osco, Vons, Pavilions, Randalls, Shaw’s, Star Market, United Express, United and Carrs/Safeway.
