No Bake Frozen Key Lime Pie is the perfect solution to a hot summer day. This tart and refreshing no bake dessert is the perfect way to cool off.

No Oven Required: It’s the perfect summer dessert because there is no oven required! All you need is access to a freezer. It only takes minutes to make.
Cool and Refreshing Treat: The combination of lemon sorbet or sherbet with the key lime juice in a graham cracker pie crust makes such a refreshing dessert. It’s an easy one to make ahead and keep in the freezer too.
Ingredients Needed
- Graham Cracker Crumbs
- Butter, salted
- Granulated Sugar
- Sweetened Condensed Milk
- Limes, regular or key limes for zest
- Key Lime Juice. I prefer Nellie & Joe’s key lime juice.
- Lemon Sorbet or Sherbet
- Green Food Coloring, optional
- Heavy Whipping Cream
What are Key Limes?
Key limes are smaller and more yellow in color than a traditional lime. They are also tarter and the zest is more powerful and has a stronger lime aroma. They can be hard to find in some parts of the country so I like to use the bottled Nellie and Joe’s Key Lime Juice you can find in the juice aisle of most grocery stores. I then use a regular Persian lime for the zest. If you have access to key limes by all means use them!
How To Make Frozen Key Lime Pie
- Combine graham crackers crumbs, melted butter, sugar in a bowl and stir until well mixed.
- Press mixture into the bottom and sides of a 9-inch pie pan.
- Mix together milk, key lime zest and key lime juice in a stand mixer.
- Add in sorbet and stir quickly to combine and until smooth. I use the paddle attachment. You can also use an electric hand mixer or mix it by hand in a mixing bowl.
- Add in a few drops of green food coloring if desired.
- Fill pie crust with filling and put in freezer for 6 hours to set up.
- Whip cream and pipe onto pie or just spared a layer over the top. Garnish with limes.
Tips
- Don’t over mix the filling. You do not want the sorbet to melt.
- Use a food processor or a blender to make your graham cracker crumbs.
- Always zest your limes first before juicing.
- Pie will set up in the freezer but will not freeze solid.
- Top it with a little fresh whipped cream and lime slices.

It will keep for 1-2 weeks in the freezer if stored in an airtight container or covered with plastic wrap or foil.
Can I use something other than graham crackers for the crust?
Yes, you can use a cookie such as a vanilla wafer or shortbread cookie.

- 1 1/4 cups graham cracker crumbs
- 1/4 cup butter melted
- 5 Tbsp granulated sugar
Key Lime Pie Filling
- 1 14 oz. can sweetened condensed milk
- 2 Tbsp lime zest
- 1/2 cup key lime juice I buy it bottled in the juice aisle.
- 2 pints lemon sorbet or sherbet
- green food coloring if desired
Garnish
- 1/2 cup whipping cream whipped
- lime slices

- Whip cream and pipe onto pie or just spared a layer over the top. Garnish with limes.
