- Sugar
- Pure Vanilla Extract

How to Make Circus Animal Cookie Ice Cream
- Combine ice cream ingredients together, except for sprinkles and cookies.
- Pour mixture into ice cream maker and churn according to manufacturer’s directions.
- Add in cookies and sprinkles once ice cream has set.
- Churn for a few more minutes to incorporate.
- Place ice cream into an insulated ice cream tub and allow to harden up in the freezer for a few hours.

Tips from leigh Anne
- Break the cookies into bite-sized pieces. A mix of larger chunks and smaller pieces gives you the perfect cookie-to-ice cream ratio in every bite.
- Add the cookies at the end. Fold the circus animal cookies into the ice cream during the last few minutes of churning or by hand after churning. This helps them keep a little crunch instead of becoming too soft.
- Use jimmies instead of nonpareils. Long rainbow sprinkles (jimmies) hold their color much better than tiny round nonpareils, which can bleed into the ice cream and create streaks of color.
- Don’t overmix the sprinkles. Gently fold them in at the end to keep the colors bright and distinct.
- Freeze before serving. Freshly churned ice cream has a soft-serve consistency. For firmer, scoopable ice cream, transfer it to a freezer-safe container and freeze for 2–4 hours before serving.
- Let it soften before scooping. If the ice cream has been in the freezer overnight, let it sit on the counter for 5–10 minutes for easier scooping.
- Have fun with toppings. For an extra festive treat, top each scoop with additional crushed circus animal cookies, rainbow sprinkles, whipped cream, or even a maraschino cherry. It’s the perfect finishing touch for birthdays or celebrations.

Frequently Asked Questions
Can I make Circus Animal Ice Cream without an ice cream maker?
Yes! If you don’t have an ice cream maker, use your favorite no-churn vanilla ice cream recipe and fold in the crushed circus animal cookies and sprinkles before freezing. You’ll still get all the fun flavor with less equipment.
Why are my cookies soft instead of crunchy?
The cookies naturally soften as they sit in the ice cream, much like cookies in cookies-and-cream ice cream. If you prefer more crunch, add the cookies just before serving or reserve some to sprinkle on top of each scoop.
Can I make this recipe ahead of time?
Absolutely! In fact, it’s even better when made a day ahead. After churning, let the ice cream freeze for several hours or overnight so it firms up and is easy to scoop.
If you’re looking for an ice cream that’s as fun to make as it is to eat, this Circus Animal Ice Cream is the perfect choice. Creamy homemade vanilla ice cream, colorful sprinkles, and nostalgic circus animal cookies come together in a dessert that’s guaranteed to make both kids and adults smile. O.M.G! Not only have you gotten me with my sweet tooth, but you’ve touched my heart like no other blogger has before! See, my grandmother used to buy me these cookies when I was a little girl… And still today they have a special place in my heart ????… So now you’ve brought two of my favorite things together and make me think of my favorite person in the whole world! I’m always pinning sweet things, but this…… This I’m DEFINITELY making! Thank you for the memories ????????????????????????????????

I notice that you put the ice cream in what looks like a bread pan to firm up. Is this better than a plastic storage container? Mine always changes texture when I put it in the freezer.
Leigh Anne says
Judy, I only did that for taking pictures because it looks nicer. When I put it in the freezer I use one of these : http://www.amazon.com/gp/product/B00EDHE4ZI?ie=UTF8&camp=1789&creativeASIN=B00EDHE4ZI&linkCode=xm2&tag=yourhomebas0e-20
