Butterscotch brownies are an ooey, gooey dessert you will love. These originated in the Nordstrom’s Cafe and were called a Nordy Bar.
Why You’ll Love this Recipe!
I first enjoyed a butterscotch brownie back in 2008 when my neighbor Sheri’s brought them to a gathering. I ate half the plate and immediately requested the recipe. They are now a family favorite.Â
They aren’t just delicious, they are so easy to make and only require one saucepan.
This is a recipe is a copy cat recipe for a Nordy Bar. The name comes from Nordstroms and is a yummy treat they use to serve at the Nordstrom Cafe.Â
Ingredients Needed
- All Purpose Flour
- Butter, salted and softened
- Light Brown Sugar. For a deeper flavor use dark brown sugar.
- Eggs
- Baking Powder
- Salt
- Vanilla Extract
- Butterscotch Chips
- Semisweet Chocolate Chips
- Miniature Marshmallows
How to make Butterscotch Brownies
- Melt butter in a sauce pan over medium heat.
- Add butterscotch chips and brown sugar and stir continuously until melted. It will separate and look a bit strange but keep stirring.
- Remove from heat.
- Add eggs, and dry ingredients including flour, baking powder, and salt and stir until combined.
- Add vanilla and combine.
- Allow to cool.
- Stir in chocolate chips, marshmallows and nuts.
- Spread batter mixture into ungreased 9 x 13 baking dish. You can also line the pan with parchment paper for easy removal.
- Bake at 350 degrees F oven for 25 minutes.
- Remove and cool before cutting.
Tips
- As you melt the butter, butterscotch chips and brown sugar don’t worry if the butter separates out, just proceed forward and keep stirring. It will eventually come together.
- Be sure to allow the mixture to cool before adding in the chocolate chips and the marshmallows so they don’t melt.
- Wait until bars cool to cut. They will be soft and have a gooey texture when you take them out, but set up as they cool.

These look really good. Nordstrom’s Cafe makes some great items.. Love their Salad dressings especially the Champagne. Thanks for the recipe. Nice to know I don’t have to drive a 100 miles to have a sample like I do to buy the Salad Dressing.
Leigh Anne says
Love that salad dressing too. Fortunately for me I have a Nordstroms about 15 miles from my house!

Leigh Anne, do you have any idea why the picture of your recipe item doesn’t show up when I use Zip-List to save the link to your page? I love Zip-List and it is my preferred way to save recipes but it just doesn’t save the right picture from your blog. And the picture is what generally attracts me to a recipe or to come back to a recipe. Any suggestions or thoughts?
Leigh Anne says
Paula. I stopped adding photos to my recipes because I had people not wanting to have to print a photo with the recipe – didn’t like having to waste all that ink 🙂 I have emailed Ziplist to see if there is a way to make the photo optional.
