Prep Ahead : Remembering to marinate the meat is the hardest part of this recipe. You can prepare the marinade and put both the marinade and the steak into a zippered plastic freezer bag and freeze it together. Then all you have to do is pull it out, let it thaw in the fridge and it’s ready to grill.
Great Flavor: The balsamic vinegar helps to make the meat tender and give it a slight sweetness to the flavor.
Ingredients Needed
- Fresh garlic cloves, minced
- Olive Oil
- Balsamic Vinegar
- Beef Broth
- Italian Seasoning or a combination of dried oregano, rosemary, thyme and basil.
- Salt and Black Pepper
- Flat Iron Steak
How to Make Balsamic Steak Marinade
- In a bowl, combine garlic, oil, balsamic vinegar, beef broth, herbs and salt and pepper.
- Place mixture into a resealable plastic bag and add in the steak.
- Shake to coat meat and then refrigerate for 8 hours to overnight.
- Grill to desired doneness.
- Remaining sauce can be heated in a pan and boiled until reduced to 1/2 and then spooned over top of steak if desired.
- Slice meat into thin slices or strips.

Grilling a steak is easy to do and the only problem is the risk of overcooking the meat. I use to be a well done kind of girl, but in my older years I have learned to like and appreciate a medium to medium rare piece of meat. - To get those great grill marks on. your steak, rotate it 1/4 turn halfway through the cooking process. You’ll get those great criss cross marks!
- I always undercook my steaks about 5 degrees or so and then remove them and let them sit for five minutes, the meat will continue to cook.
- I think this balsamic marinated steak is best if cooked to a medium or medium rare temperature. You can cook it more well done but it wil lbe less flavorful.
- You can also use this marinade with grilled veggies. Just coat the veggies before grilling. It is also delicious as a salad dressing.

What Cut of Meat works best With Balsamic Steak Marinade?
There are several different cuts of meat that you can use. My favorite are a falt iron steak. Other cuts of meat that work well are a flank steak, hanger steak or a skirt steak. Any steak with a nice marbling seems to work best in a marinade.
I don’t have a grill how can I make this?
You can cook your steak in a grill pan or a cast iron skillet on the stovetop if you don’t have a grill.
How long will balsamic steak marinade last?
Kept stored in an airtight container or jar in the refrigerator it will last for up to a week.
How long should I marinate my meat for?
I think at least 8 hours is a good amount of time but you can also do it overnight. I would shoot for a minimum of 4 hours. If you are using skirt steak I think longer is better. Skirt steak can be a tougher cut of meat and the marinade tenderizes the meat.
Don’t marinate for longer than 24 hours though as the acid in the marinade can start to “cook” the meat and make it tough once it’s grilled.

Balsamic Steak Marinade
Ingredients
- 4 tsp garlic minced
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 cup beef broth
- 1 Tbsp Italian Seasoning
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 1/2 lb. flat iron steak
Instructions
- In a bowl, combine garlic, oil, balsamic vinegar, beef broth, herbs and salt and pepper.
- Pour into a resealable plastic bag and add steak. Shake to coat and refrigerate for 8 hours or overnight.
- Heat grill to medium high heat.
- Grill steak on each side for 5-6 minutes for medium. Use a thermometer to check temperature.
- Steak will continue to cook once it is removed from grill.
- Remaining sauce can be heated in a pan and boiled until reduced to 1/2 and then spooned over top if desired.

This is an excellent marinade. Flat iron steak is one of my favs. The piece was as tender as fillet mignon at less than half the price. I marinated mine for just under 6 hours and it was still fantastic.
