Tomato Ideas and a Note of Gratitude

Just a quick post this holiday weekend to share with you a few of my favorite tomato recipes.

I know some of you may have a bumper tomato crop this year and aren’t sure what to do with all those tomatoes. Unfortunately, this year, I am not one of you. Not sure what we did wrong but our tomato harvest is a little lean this year!

But before I share the links to the recipes I want to say THANK YOU!!

Thank you for all of the amazing comments you have left and the beautiful private emails I have received. They have filled my heart to overflowing. What could have been a sad, sad weekend has turned into one of joy and gratitude for all the amazing support and love we have felt from so many of you!

After reading many of the comments my daughter Tessa commented, “You really have such sweet readers.”

My husband has been overwhelmed and so appreciative of your comments, your emails full of helpful tips and suggestions and even information on possible job opportunities.

We know there is a reason for what we are going through, things that we need to learn. I am a firm believer that when we suffer trials, one of the main reasons we go through them is because some day we will have the opportunity to help someone else going through the same trial. That what we are learning and experiencing will one day benefit someone else.

I hope that I will have the opportunity one day to be a support and comfort to someone else just as all of you have been to me.

Thanks to your support I have not felt the stress and anxiety that I know I would have felt otherwise. I have a peaceful heart and know that if we just Trust and Obey that things will work out.

My son Logan helped put things in perspective.  The night before Jim called to tell the kids he had lost his job Logan had had a dream – he had not told us about the dream.  In the dream Jim had told him that he had a brain tumor and only had six months to live.  So when Jim called to tell Logan he had lost his job, Logan’s first response was “That’s it? – We can handle that!”   Perspective!

    Glad you are feeling peace during this time!

    One idea on the tomatoes being lean this year. You guys have had a lot of very hot days this summer and that seems to put a damper on tomato production. Here’s to a better crop next year!

    In the post for the tomato pie, you mentioned Marinara Sauce that you were going to make. I’ve been looking for a Marinara recipe that I could possibly can or freeze. Would you mind sharing that recipe?

    P.S. Hope all goes well with your husband’s job hunt. I loved hearing about your son’s dream and reaction to the phone call. Really does put things into perspective.

    I’ll dig out the marinara recipe today and send it on – since I didn’t have many tomatoes this year I won’t be making any :(

    Wow, sounds like a rough situation. My husband works in sales, and it really is a frustrating/unstable field. I hope your husband is able to find something bigger and better :)

    I love tomatoes. My harvest has been plentiful this year, but odd. I planted 4 plants: roma, grape, beefsteak, and a german hybrid. The first three have taken off. We have more than we can consume. The hybrid has a lot of green fruit…and they’re not changing color! Also, in the past, romas have been my favorite, but this year, they’re rather pasty and flavorless. I’m thinking of making a ton of spaghetti sauce w/ them though.

    Here’s one of my favorite summer recipes to use up all those grape/cherry tomatoes. I add about 3x the amount of tomatoes as the recipe calls for. Great side dish/afternoon snack. I’m not sure if you’ve cooked much w/ it, but don’t be intimidated by the quinoa, it’s fantastic!

    Perspective, exaclty!
    We never know where we’re going to be. I believe that even if there is some sacrifice and struggling, you will come out on top. You already know that prayer works and it will help you through. (Oh boy, do I have a long story for you!)
    Hang in there, it will work out!

    My husband lost his job the day after I gave birth to our third son. We didn’t have much in savings, did have a mortgage and a car payment and expenses for 5. We depended totally on God to provide and provide He did – in ways that were at time 100% miraculous.
    In everything, with prayer and thanksgiving, let your needs be made known to God and He will supply . . .
    You’re embarking on an exciting adventure of faith!
