Chocolate Mint Brownies have a delicious layer of mint frosting sandwiched between the chocolate fudgy brownie and a creamy chocolate icing.

Why You’ll Love This Recipe!

One of my favorite things to do when I visit my college alma mater is to buy BYU Mint Brownies in The Wilkinson Center.  These mint chocolate brownies are delicious and a favorite of almost everyone that steps foot on campus. Mint Brownies are a chocolatey, chewy brownie recipe with a layer of mint green frosting covered by another layer of chocolate frosting! If you love mint and chocolate, this is the perfect recipe for you.

BYU Mint Brownies

Ingredients

  • Butter, I use salted butter
  • Unsweetened Cocoa Powder
  • Honey
  • Eggs
  • Sugar
  • Flour. I prefer unbleached all purpose flour
  • Baking powder
  • Salt
  • Milk. I use 2 percent but use what you have on hand
  • Light corn syrup. The corn syrup gives the frosting a glossy appearance on top and can be left out if desired.
  • Powdered sugar
  • Mint extract. Mint is different than Peppermint (see FAQ below)
  • Green food coloring, optional

How to Make Mint Brownies

Start by making the brownies.

  • Melt butter and mix in cocoa in a microwave safe bowl in the microwave or in a saucepan on the stovetop. Allow to cool
  • Mix honey, eggs, sugar, flour, baking powder and salt into the butter and cocoa mixture.
  • Pour batter into a greased 9 x 13 pan. Spray with cooking spray.
  • Bake at 350 degrees F oven for 25 minutes
Homemade BYU Brownies

While the brownies cool, make the mint layer.

  • Add salt, corn syrup and powdered sugar to softened butter and beat until smooth and fluffy.
  • Add mint extract and green food coloring and mix well.
  • Add milk gradually until the consistency is a little thinner than cake frosting.
  • Spread mint icing over brownies.
  • Place brownies in freezer for mint layer to harden.

Make Chocolate Frosting

  • Add salt, corn syrup and powdered sugar to softened butter and beat until smooth and fluffy.
  • Add cocoa and mix until smooth
  • Add milk gradually until the consistency is a little thinner than cake frosting
  • Spread chocolate icing over mint icing

Tips from leigh Anne

  1. For easier frosting, place brownies in the freezer after adding the mint layer.
  2. These brownies are also delicious with chocolate ganache instead of chocolate frosting. See recipe for details.
  3. Brownies cut best with a plastic knife.

Frequently Asked Questions

Is mint extract the same as peppermint extract?

No, it’s not. Mint extract is a combination of spearmint and peppermint while peppermint is just peppermint. I prefer the more subtle mint flavor of mint extract in this recipe.

Can I use chocolate ganache on top instead of chocolate frosting?

Yes! If you prefer a ganache topping. Melt one cup of semi-sweet chocolate chips and 1/2 cup of butter together either in the microwave or in a saucepan on the stove top. With a knife or offset spatula, spread melted mixture over the top of the mint frosting and allow to set up.

How long will mint brownies last?

Stored in an airtight container at room temperature they will last 2-3 days or in the refrigerator for 3-4.

Can I freeze mint brownies?

They can be frozen in an airtight container. Cut the brownies into squares after frosting has set up and wrap each individually in plastic wrap and then a layer of foil. Place the individually wrapped brownies in a large plastic freezer bag.

Brownies layered with a creamy mint frosting and a thick chocolate coating.

Ingredients

Brownies

  • 1 cup butter salted
  • 1/2 cup unsweetened cocoa powder
  • 2 Tbsp honey
  • 4 eggs
  • 2 cups sugar
  • 1 3/4 cups all purpose flour I prefer unbleached
  • 1/2 Tsp baking powder
  • 1/2 tsp salt
  • 1 cup chopped walnuts I left these out

Mint Icing

  • 5 Tbsp butter
  • dash of salt
  • 3 Tbsp milk
  • 2 1/3 cups powdered sugar
  • 1/2 tsp. mint extract
  • 1-2 drops green food coloring

Chocolate Icing

  • 5 Tbsp butter
  • dash of salt
  • 3 Tbsp milk
  • 1 Tbsp light corn syrup
  • 2 1/3 cups powdered sugar
  • 1/3 cups unsweetened cocoa powder

Instructions

Brownies

  • Melt butter and mix in cocoa in a microwave safe bowl in the microwave or in a saucepan on the stove top. Allow to cool
  • Add honey, eggs, sugar, flour, baking powder and salt into chocolate mixture and mix well.
  • Add in chopped nuts, if desired
  • Pour batter into a greased 9 x 13 pan
  • Bake at 350 degrees F for 25 minutes. Cool

Mint Icing

  • Add salt, and powdered sugar to softened butter. Beat until smooth and fluffy.
  • Add mint extract and green food coloring and mix to combine.
  • Add enough milk gradually until the consistency is a little thinner than cake frosting
  • Spread mint icing over brownies
  • Place brownies in the freezer for a short time to set the icing

Chocolate Icing

  • In a bowl combine softened butter, salt, corn syrup and powdered sugar. Mix until combined, smooth and fluffy.
  • Add in cocoa powder and mix until smooth.
  • Add milk gradually until the consistency is a little thinner than mint frosting
  • Spread chocolate icing over mint icing

Tips & Notes:

To make a chocolate ganache topping rather than frosting:
Melt one cup of semi-sweet chocolate chips and 1/2 cup of butter together either in the microwave or in a saucepan on the stove top. With a knife or offset spatula, spread melted mixture over the top of the mint frosting and allow to set up.

    Oh my these look so goood, but I am just a little bit confused. Do you make the mint frosting for the green middle and then another batch of frosting without the mint for the frosting part ? Not sure I am clear on that.

    I was just in Provo last week and enjoyed a mint brownie after a RS Fireside I attended with my daughter. I’m excited to have the recipe to make them at home.

    Love this! I was addicted to the Wilkinson Center brownies a zillion years ago. So, I know where you’re coming from. LOL I think they must have improved things.. I’m sure the ones we had back then were full of shortening. Butter is so much more appealing! Thanks, for the trip down Memory Lane. 🙂 I’m pinning this.

    My family teases me every time we go to Utah because I have to go get a mint brownie from the creamery! Glad to know someone else has it on their Must Do List too!! I’m so glad I found this on pinterest…..now I don’t have to travel 12 hours just for my brownie fix! hehe
