Melt butter and mix in cocoa in a microwave safe bowl in the microwave or in a saucepan on the stove top. Allow to cool
Add honey, eggs, sugar, flour, baking powder and salt into chocolate mixture and mix well.
Add in chopped nuts, if desired
Pour batter into a greased 9 x 13 pan
Bake at 350 degrees F for 25 minutes. Cool
Mint Icing
Add salt, and powdered sugar to softened butter. Beat until smooth and fluffy.
Add mint extract and green food coloring and mix to combine.
Add enough milk gradually until the consistency is a little thinner than cake frosting
Spread mint icing over brownies
Place brownies in the freezer for a short time to set the icing
Chocolate Icing
In a bowl combine softened butter, salt, corn syrup and powdered sugar. Mix until combined, smooth and fluffy.
Add in cocoa powder and mix until smooth.
Add milk gradually until the consistency is a little thinner than mint frosting
Spread chocolate icing over mint icing
Notes
To make a chocolate ganache topping rather than frosting:Melt one cup of semi-sweet chocolate chips and 1/2 cup of butter together either in the microwave or in a saucepan on the stove top. With a knife or offset spatula, spread melted mixture over the top of the mint frosting and allow to set up.
