Summer time means lots of salads at our house. Not only because it is a nice light meal to prepare but we also have lots of lettuce growing in our garden that needs to be eaten!!
I rarely buy store bought salad dressing because homemade tastes so much better and it is easy to make. We prefer a balsamic vinaigrette at our house and it is super easy to put together.
We all know that a good vinaigrette is the combination of a good quality olive oil and a good quality vinegar. I am a big fan of balsamic vinaigrette so I was excited when Pompeian sent me a bottle of their olive oil and balsamic vinegar to use. I was good to go! Pompeian Vinegars are gluten free and non-allergenic which is perfect for those at my house with food sensitivities. I also love the deep, distinctive flavor and aroma of the balsamic vinegar that comes from it being aged in wooden casks. I love just dipping bread into it!
But back to the dressing. I also use dijon mustard, minced onion, lemon juice, honey or sugar, garlic and some salt and pepper in the dressing. Then I can get creative.
I love to go out to the herb garden and clip fresh herbs to infuse my dressing with.
My favorite herbs to use are some combination of oregano, thyme, marjoram and basil. I like to make the dressing up a day or so ahead of time and let it sit in the refrigerator and let the herbs infuse the dressing. Yum!
A simple salad of fresh greens with a homemade herb infused balsamic vinaigrette is all a salad needs! Of course, this vinaigrette is good on lots of things other than salads! It is yummy to use with roasted vegetables, roasted potatoes and even as a marinade for meat.

For some yummy recipes to use balsamic vinaigrette with try these:
- 1 Tbsp Dijon mustard
- 3 Tbsp balsamic vinegar
- 3 Tbsp lemon juice
- 2 Tbsp honey
- 1-2 cloves of garlic minced
- 2 -3 tsp of fresh chopped herbs. Use a combination of oregano marjoram, thyme, basil etc.
- Scant 1/2 cup olive oil
- Mix all ingredients together and put in refrigerator to give the herbs a chance to infuse the dressing.
