It’s the 10th day of the month, so I’ve gathered my creative blogging friends, and we came up with a PASTEL theme to create projects around, since SPRING is upon us! This begins our 11th month with this collaboration. We had so much fun with it the past 10 months, we decided to take it another round. Now for my project:
My love affair with lemon has pretty much been a life long one. At least as far back as I can remember. So when I found out the Blog Hop theme for this month was pastel and my favorite pastel color is yellow I knew I had to share a lemon dessert. This recipe may just be the reason for my life long lemon love affair. It is the first lemon dessert I remember eating and I can’t believe I have never shared it on the blog before. The recipe belongs to my Grandma Zola and has been in my recipe collection for decades. I think it was probably my mother though that made it for me the first time and I made it often in the early years of our marriage. But for some reason, probably too many good recipes, it has been many years since I have made it. Every time I look through the collection of family recipes my daughter put together I see it and it always reminds me of my Grandma Zola.
I am excited to finally share it with you today. It is a nice light, very refreshing dessert and comes together quickly and easily. One of the other things I love about this recipe is it is made with vanilla wafers – another favorite from childhood! The process to put it together is easy. You start with a layer of ground up vanilla wafers on the bottom of your pan. You cook the egg yolks, lemon juice and sugar until it thickens and then combine it with whipped egg whites and whipped cream. Spread it over the vanilla wafer crust and then sprinkle with more vanilla wafers. Freeze for 3-4 hours or until ready to serve. It is perfect for a warm spring or summer day and would be a lovely dessert to serve for Easter dinner or brunch. The only downside to it is it only makes a 8 x 8 or about 6-9 servings so you may need to double it for a 9 x 13 pan. Just be warned eating this dessert may start a life long love affair with lemon for you too! I can think of worse things.

Frozen Lemon Dessert
Ingredients
- 3 eggs separate yolks and whites
- 1/2 C sugar
- 3 Tbsp fresh lemon juice
- 1 C heavy whipping cream
- 1/2 C crushed vanilla wafers
Instructions
- Mix together yolks, sugar and lemon juice in a pan and stir over low heat until thick. Approx. 4-5 minutes
- Remove from heat and cool.
- Beat egg whites until stiff and fold into cooked mixture.
- Whip cream and fold into above mixture
- Spread 2/3 of the vanilla wafer crumbs over bottom of an ungreased 8 x 8 or 9 x 9 pan.
- Pour in lemon mixture
- Sprinkle with remaining crumbs.
- Freeze

Maybe this page just isn’t loading right on my tablet, but I can’t see a recipe at all — just photos. What are the amounts of the ingredients? In the description, you don’t specify when the lemon juice gets added, so I was planning to watch for it in the recipe but then couldn’t find it. 🙂

Same here. Not finding an actual recipe. How many Nilla Wafers for each part of the recipe? How many eggs? How long does it take for the egg yolks and sugar to thicken, approximately, and at what temperature should the burner be? Does the pan require a light greasing, or do the slices come out easily because they’re frozen? Thanks so much in advance for your help!
