Cinnamon Roll Cake is a tender, delicious coffee cake that has all the sweet, gooey goodness of a cinnamon roll, but much easier to make. It has a light fluffy cake swirled with cinnamon sugar goodness and topped with a powdered sugar glaze.

Quick and Easy. Everyone loves cinnamon rolls, but it is usually a special occasion when you take the time to actually make them from scratch.  Now you can get all the same sweetness and gooey-ness of a homemade cinnamon roll in so much less time with this easy cinnamon roll cake recipe.

Amazing Taste. A cake that tastes just like a cinnamon roll with only a fraction of the work of a cinnamon roll! It can be served for breakfast or as dessert.

Ingredients Needed

  • All Purpose Flour
  • Butter, salted
  • Sugar, granulated sugar, powdered sugar, and brown sugar.
  • Milk. I use whatever I have on hand.
  • Eggs
  • Baking Powder
  • Vanilla Extract
  • Cinnamon
  • Salt

How to Make Cinnamon Roll Cake

  • Mix together flour, salt, sugar, baking powder, milk, eggs, and vanilla in a large bowl. Whisk together until combined.

  • Slowly stir in the melted butter.
  • Pour cake batter into a 9×13 inch pan sprayed with nonstick cooking spray..

  • Mix together melted butter, brown sugar, flour and cinnamon for the topping. 
  • Drop mixture evenly over the top of the cake batter and swirl with a knife.

  • Bake at 350 degrees F for 28-32 minutes or until a toothpick comes out clean.
  • Remove cake from oven.

  • Mix powdered sugar, milk, and vanilla to make a glaze.
  • Drizzle glaze over the warm cake.

Tips from leigh Anne

  1. When swirling in cinnamon mixture, be sure to swirl down into the cake so the mixture is not just on the top.
  2. If you don’t need a whole 9 x 13 inch pan of cinnamon roll cake, you can divide this recipe in half and use an 8 x 8 inch pan.
  3. The cake slices better if you allow it to cool a bit but I love a cinnamon roll warm so I cut into it anyway!!

Frequently Asked Questions

What’s the best way to store leftover cinnamon roll cake?

It can be stored covered or in an airtight container at room temperature for 2-3 days. Stored in the refrigerator it will last 3-4 days. Rewarm in the microwave or covered with foil in the oven at 300 degrees F.

Can I freeze cinnamon roll cake?

To freeze slices of the cake I recommend freezing individual slices. Wrap them in plastic wrap and then place in a zippered freezer bag. Store for up to 3 months in freezer, When ready to eat, unwrap and microwave for 30-60 seconds to thaw and warm through.

Can I add a cream cheese frosting instead?

Absolutely! Mix together 6 oz cream cheese, softened
4 Tbsp butter, softened, 3 cups powdered sugar and 1/4 tsp vanilla extract. Mix until smooth. Spread over top of cooled cake. If using a cream cheese frosting, leftover cake needs to be stored in the refrigerator

Cinnamon Roll Cake

The warm, gooey goodness of a cinnamon roll in a much shorter time.  No waiting for dough to rise when making this delicious cinnamon roll cake.
serves: 12 servings

Cook:30 minutes minutes

Ingredients

Cake:

  • 3 cups flour
  • 1/4 tsp salt
  • 1 cup sugar
  • 4 tsp baking powder
  • 1 1/2 cups milk
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup butter, salted melted

Topping:

  • 1 cup butter softened
  • 1 cup brown sugar
  • 2 Tbsp. flour
  • 1 Tbsp. cinnamon

Glaze:

  • 2 cups powdered sugar
  • 5 Tbsp. milk
  • 1  tsp. vanilla

Instructions

  • Mix together flour, salt, sugar, baking powder, milk, eggs, and vanilla.  Then slowly stir in the melted butter and pour into a greased 9×13 pan.
  • Next, mix together the butter, brown sugar, flour and cinnamon for the topping.  Drop evenly over the batter and swirl with a knife. 
  • Bake at 350 for 28-32 minutes.
  • Once cake is out of the oven, mix together the powdered sugar, milk, and vanilla for the glaze.  Drizzle over the cake while still warm.

    I can’t seem to get the whole printable recipe to open up. It only comes up as the title. Am I just having computer issues? Sorry to bother you about it, I just wondered if I was the only one have problems. I will try again later:)
