Chocolate Oatmeal Bars

Chocolate Oatmeal Bars are chewy on the bottom, a thick fudgy middle and crispy on top. Full of yummy flavor and great texture.

These Chocolate Oatmeal Bars are going to be a favorite of all your chocolate lovers. The middle chocolate layer has a fudge like consistency and is guaranteed to satisfy any chocolate craving.

These bars need about an hour of cooling time to make them easier to cut so plan ahead for that.

How to Make Chocolate Oatmeal Bars

These delicious oatmeal fudge bars are so easy to make.

For the Crust:

  • Combine flour, oatmeal, sugar, baking powder, baking soda and salt.
  • Remove 1 1/4 cup of mixture and set aside.
  • Press remaining mixture into the bottom of a 9 x 9 baking pan. I line my pan with parchment for easier removal. If not using parchment paper, spray the pan with baking spray.

  • Bake this layer at 325 degrees F for 8 minutes. Cool completely.

For Filling:

  • Melt chocolate and butter in a bowl. Add in eggs.
  • Combine flour, sugar and salt in a bowl and pour this into chocolate mixture.

  • After crust has cooled, pour filling mixture over the top.

  • Sprinkle with reserved oatmeal mixture and bake at 325 F for 35-40 minutes.

Cool the bars to room temperature or at least one hour.

After they have cooled cute into squares and enjoy. I love mine with a glass of cold milk!

Oatmeal Chocolate Bars

Ingredients

Crust

  • 3/4 cup all purpose flour
  • 1 cup quick cooking oats
  • 1 cup brown sugar packed
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup butter melted and cooled

Filling

  • 1/2 cup all purpose flour 1/2
  • 1/2 cup brown sugar packed
  • 1/2 tsp salt
  • 2 cups semi sweet chocolate chips
  • 4 Tbsp. butter cut into pieces
  • 3 eggs

Instructions

For Crust

  • Combine flour, oatmeal, sugar, baking powder, baking soda and salt.

  • Bake this layer at 325 degrees F for 8 minutes. Cool completely.

  • After crust has cooled, pour filling mixture over the top.

    This sounds delightful!
    I doubled the ingredients using your doodad on the recipe, so I could make this in a 9×13″ pan, but the instructions didn’t change. I know to double the amount reserved for the topping, but have you done this to be able to tell me the bake time for the bottom crust and then after the filling/topping is added?

    These bars look intense! I made your lemon bar recipe, wow! Everyone I shared them with couldn’t believe I made them! Rave reviews! So I quadrupled the recipe and they disappeared in record time. I did have a lot of drizzle mix left over, will cut that part back. Thanks for the recipe. They are on my repeat list!
