Baked Oatmeal for One

Baked oatmeal for one is the perfect way to start the day. Add in your favorite fruit and you have a delicious and healthy single serve breakfast that only takes minutes to put together.

Why You’ll Love This Recipe!

It’s versatile. I love the versatility of this baked oatmeal recipe. The variations are pretty much limitless by what you have in your pantry or refrigerator. You can add in dried fruit, nuts, chocolate, fresh or frozen fruit.

It’s quick! You can put this together in minutes and then it’s ready to bake. You can also mix it together the night before, keep it covered in the refrigerator and bake it in the morning.

Ingredients Needed

  • Butter. You can also use coconut oil
  • Honey. Maple syrup or brown sugar will also work. 
  • Egg
  • Oats. I prefer old fashioned but quick oats will work also.
  • Baking powder
  • Salt
  • Cinnamon
  • Vanilla Extract
  • Milk.  I use 2 percent but can also use almond milk, soy or coconut milk.
  • Blueberries. You can use fresh or frozen. 

How to Make Baked Oatmeal for One

  • In a bowl, combine melted butter, honey and egg. Mix to combine.
  • Add in oats, baking powder, salt, cinnamon, vanilla, milk. Stir until combined.

  • Pour in blueberries.
  • Pour into a greased 2 cup baking dish or ramekin.

  • Bake at 350 degrees F oven for 30 minutes.

Additional Add Ins:

  • Bananas
  • Raspberries
  • Strawberries
  • Chopped Apples
  • Dried fruit such as apricots or cranberries
  • Nuts such as walnuts, almonds or pecans.
  • Chocolate Chips
  • Spoonful of peanut butter
  • Chia Seeds
  • Other spices such as nutmeg, pumpkin spice, ginger etc.
  • Raisins

How to Serve

  • You can serve baked oatmeal warm, room temperature or chilled.
  • We like to add a scoop of plain Greek Yogurt or drizzle with some milk or cream.
  • Add some additional berries as garnish.

Frequently Asked Questions

Can I use frozen fruit?

You can use fresh or frozen fruit. You can add the fruit in while it is still frozen. Baking time may vary a bit.

Ingredients

  • 1 Tbsp butter melted. Can also use coconut oil
  • 1-2 Tbsp honey can also use maple syrup or brown sugar
  • 1 egg
  • 1/2 cup oats I prefer old fashioned.
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla
  • 1/4 cup milk I use 2 percent but can also use almond, soy or coconut milk.
  • 1/2 cup blueberries or other fruit. Fresh or frozen
