Caramel Chocolate Cookies are an amazing combo of chocolate chip toffee cookies drizzled with chocolate and caramel.

Caramel Sundae Cookies

One of my favorite desserts is vanilla ice cream with caramel and hot fudge sauce and a sprinkle of toffee chips! I decided to take all of these flavors and make them into a delicious caramel chocolate cookie.

These cookies start with one of my favorite chocolate chip cookie recipes, then I added toffee bits before baking. The crowning touch is melted chocolate and melted caramel bits drizzled over the top.

Ingredients Needed

  • All Purpose Flour
  • Butter
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • Baking Soda
  • Salt
  • Chocolate Chips, semi sweet
  • Toffee Bits
  • Caramel Bits
  • ?1 Tbsp whipping cream
  • ?1/2 cup semi sweet or milk chocolate chips

The cookie itself, has chocolate chips and toffee bits in the dough.  If you are a “nuts in your baked goods” kind of person you may want to include some chopped pecans.  But I am not that kind of person.

How To Make Chocolate Caramel Cookies

  • Combine butter and brown sugar in a bowl and beat until creamy.
  • Add eggs and vanilla, beat until well mixed.
  • Combine flour, baking soda and salt.
  • Mix flour mixture into butter and sugar until just combined.
  • Stir in 1 cup semi sweet chocolate chips and toffee bits
  • Scoop cookies onto greased cookie sheet, 2 inches apart.
  • Bake at 350 degrees F. until edges are golden brown, about 9-11 minutes.
  • Remove baked cookies to cooling rack and allow to cool completely.
  • Melt caramels and whipping cream over medium low heat.  Stir until smooth and melted.
  • Drizzle over cooled cookies

Tips

  • Mix it up and substitute your favorite chopped nuts in place of the toffee bits.
  • Add a little vegetable oil to melted to chocolate if needed to get the proper drizzling consistency.
  • Allow the caramel and chocolate drizzle to set up fully before serving. Put them in the refrigerator for a few minutes to speed up the process.

Do these stay a bit goopy on top? or would they be okay for a Christmas cookie exchange where they are piled on top of each other?

I pop them in the refrigerator and the caramel sets right up.

These cookies sound amazing! I am so excited to try them!
Quick question – what do you mean by “caramel bits”? Just something like Kraft caramels that come in individually wrapped squares? Or does someone sell smaller bits, like the toffee crumbles that are on the baking aisle with the chocolate chips?

Dori – here is a link to what I used – http://amzn.to/2fupX9t. You can find them in with the chocolate chips.
