Blueberry Bread

Blueberry Bread is the perfect way to enjoy fresh blueberries.  With a hint of lemon, this moist, tender bread is perfect for brunch or just a delightful snack.

Easy Quick Bread

I was in the mood for a little sweet bread the other day and had some blueberries in the fridge. I love the combination of blueberries and lemon so I added in some lemon into the glaze. This bread is a fun twist on my favorite lemon blueberry muffin.

How to Make Blueberry Bread

  • Mix together softened butter, sugar and eggs.
  • Add in four, baking powder and salt.
  • Gently fold in blueberries.

  • Pour into a greased 9 x 5 x 3 loaf pan.

  • Bake at 350 degrees for one hour or until a toothpick comes out clean.
  • While bread is baking, mix up glaze.
  • Combine lemon or orange juice, and sugar in a small pan. Heat to dissolve sugar.
  • Remove bread from oven and pour glaze over the top of hot bread.

The glaze will pool around the bread, don’t worry. It will soak in as the bread cools.

  • Allow bread to stand in pan for about 10 -15 minutes to allow the glaze to absorb into the bread.
  • Remove the bread from the pan and allow to cool completely before slicing.

Frequently Asked Questions

Can I add lemon zest and juice to the bread batter for more flavor?

Sometimes I will also add the zest and juice of one orange or one lemon to the batter for extra flavor.

What if it looks like the glaze is not absorbing?

If I’m worried about the glaze absorbing I will run a knife around the edge of the bread to loosen it a bit and allow the glaze to absorb down into the sides of the bread.

Can I use frozen blueberries?

When using frozen blueberries I like to let them thaw and then pat them dry. I also will give them a light coating of flour to help stop them from bleeding into the bread batter.

Blueberry Orange Bread

Blueberry Orange bread will quickly become your favorite way to use fresh blueberries.  Delicious orange bread packed with fresh, ripe blueberries is the perfect combination.
serves: 12 servings
Prep:20 minutes
Cook:1 hour
Total:1 hour 20 minutes
Rate Recipe

Ingredients

  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 orange zest and juice
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup blueberries

Glaze

  • 1 orange juiced
  • ¼ cup sugar

Instructions

  • Mix together butter, sugar and eggs.
  • Stir in rind and juice.
  • Add in flour, baking powder and salt.
  • Mix until combined and moistened.
  • Pour into a greased 9 x 5 x 3 loaf pan.
  • Bake at 350 degrees for 1 hour or until toothpick comes out clean

Glaze

  • Combine juice and sugar in a small pan. Heat to dissolve sugar.
  • Pour glaze over top of hot loaf.
  • Let stand for 10-15 minutes before removing from pan.
