Complete Breakfast: I love having overnight guests but I always struggle a bit with what to serve them for breakfast. I love a good breakfast casserole because you can get a complete breakfast all in one pan! And this breakfast casserole is loaded with bacon, egg, hash browns, and cheese. It is always a huge hit with guests.
Make Ahead: I love that I can mix this up the night before and then just pop it in the oven in the morning. But it is quick enough to make the day of too.
Ingredients
- Eggs
- Cubed Hash Browns, frozen and thawed
- Bacon
- Onions, diced
- Medium Cheddar Cheese, shredded
- Swiss Cheese, shredded
- Cottage Cheese, small curd
How to Make A Breakfast Casserole
- In a large frying pan, brown hash browns until golden brown.
- Cook diced bacon and onion over medium heat until bacon is crispy. Drain grease.
- Place bacon and onion mixture along with browned hash browns and remaining ingredients in a bowl. Stir to combine.
- Pour into a 9 x 13 greased baking dish
- Bake at 350 degrees F for 45-50 minutes.
- Before removing from the oven, make sure the egg is set and cheese is melted. If you prepared the casserole the night before, it may take a few additional minutes of baking time.
Tips
- You can substitute shredded hash browns if you prefer.
- This recipe is easy to customize. Substitute your favorite cheese, Pepper Jack would be great, or replace the bacon with sausage or diced ham.

- 1 lb. bacon diced
- 1 cup onion diced
- 4 cups O’Brien cubed hash browns thawed
- 9 eggs
- 2 cups Medium Cheddar Cheese shredded
- 1 1/2 cups Swiss cheese shredded
- 1 cup small curd cottage cheese

Can you freeze this? After its cooked or even before in a baggie?

I have never frozen it, it might change the texture of the egg after thawing.
