Made with a flaky pie crust and filled with delicious spiced apples, this apple galette for one is an easy and quick dessert to put together. It’s the perfect amount for 1 or 2 people, if you feel like sharing!

Why You’ll Love This Recipe

Easy to Make. Sometimes you just don’t want to share and this apple galette for one recipe is the perfect single serve dessert. It requires only one apple and you can make the pie crust from scratch in minutes or use part of a store bought crust.

Full of Flavor. Lightly spiced apples in a flaky pie crust topped with a scoop of ice cream and maybe a drizzle of this amazing caramel sauce and you have the perfect dessert.

Ingredients Needed

Apple. I like to use a tart granny smith apple but you can use your favorite apple.

Granulated Sugar

Flour. I like unbleached all purpose flour

Butter. I use salted butter, you want it cold.

Salt

Cinnamon

Nutmeg

Cornstarch

Ice Water

Egg (not pictured) optional, for putting an egg wash on pie crust.

Coarse sugar (not pictured) optional, for sprinkling on pie crust after brushing with egg wash.

How to Make Apple Galette for One

  • In a bowl combine flour, sugar and salt.
  • Add in cold butter, cut into small pieces.
  • Use a pastry blender or a fork to combine ingredients until it resembles small pea size crumbs.

  • Add in cold water a teaspoon at a time, start with just one and mix together until dough comes together. Use your hands to bring the door together in a ball.
  • Roll out dough about 1/8 inch thick onto a piece of parchment paper with a rolling pin into an 6-8 inch circle.

  • Place parchment paper on baking sheet.
  • Cut apples into slices, about 1/4 inch thick.
  • In a bowl, combine cinnamon, nutmeg, sugar and cornstarch.

  • Add sliced apples to the center of dough, leaving a 1-2 inch border of crust showing.
  • Fold the crust up and around the apple filling, leaving the middle exposed. Make tucks in the dough as you fold it around the apples.
  • Dot top of apples with 1/2 Tbsp butter
  • For a golden brown, shiny pie crust, beat an egg and brush the dough with the egg. Sprinkle with a bit of coarse sugar if desired.

  • Bake at 400 degrees F for 20 minutes or until crust is golden brown.
  • Serve with ice cream and caramel sauce, if desred.

Tips from leigh Anne

  1. If you like, you can substitute a favorite berry such as blueberries, raspberries or blackberries for the apples. Also, a combination of berries and apples is also delicious!
  2. Be sure and cut apple slices into even thickness so that they cook evenly.
  3. For a little extra crunch, add a tablespoon or two of chopped walnuts or pecans in with the apple mixture before baking.

How to Serve Apple Galette

  • Warm. I think this is best enjoyed warm out of the oven but is also delicious at room temperature or cold.
  • Vanilla Ice Cream. I eat it right off the baking sheet with a scoop of ice cream – no need for a plate! Homemade vanilla ice cream is even better.
  • Caramel Sauce. Add a drizzle of homemade caramel sauce to take it to a whole new level!
  • Sweetened Whipped Cream. Add a spoonful of sweetened whipped cream and a sprinkle of cinnamon.

What is a galette?

A galette is a French pastry that is a similar to a pie but it is more rustic. It is made baked on a flat surface without a pie dish, the edges of the pastry are just folded up over the filling. It can be sweet or savory.

How do I store any leftover apple galette for one?

If you have any leftovers, keep them stored in an airtight container in the refrigerator for 2-3 days.

Can I double or triple the recipe?

Can I make the pie dough ahead of time?

Yes, pie dough can be made several days ahead and then wrapped in plastic wrap to keep it airtight and stored in the refrigerator. It can also be frozen in an airtight freezer bag for up to 3 months.

How do I tell if my apple galette for one is done?

The pie crust will be golden brown and the fruit juices will be hot and bubbly. You want the apples to be fork tender.

Apple Galette for One

Delicious individual sized apple filled puff pastry.

Ingredients

Crust:

  • 1/4 cup all purpose flour plus 1 Tbsp
  • pinch salt
  • 1 tsp sugar
  • 2 Tbsp cold salted butter
  • 2-3 tsp ice cold water

Filling:

  • 1 apple peeled and cored and sliced to 1/4 inch slices
  • 1/4 tsp cinnamon
  • 1 pinch of nutmeg
  • 1/2 tsp cornstarch
  • 1 Tbsp sugar add 2nd Tbs if you prefer it sweeter
  • 1/2 Tbsp butter salted

Instructions

  • In a bowl, combine flour, salt, sugar and butter. Use a pastry blender or your fingers to combine the mixture until it resembles damp sand.
  • Add in 2-3 tsp (a tsp at a time) of cold water until the dough comes together, you don't want it wet. Use your hands to bring the dough together.
  • If the dough is too soft or sticky to roll out, wrap it in plastic wrap and refrigerate for 20-30 minutes.
  • To roll it out, place the dough, flattened into a disc between two sheets of lightly floured parchment paper. Roll out with a rolling pin to about 1/8 inch thick.
  • Remove top piece of parchment paper and place the crust on the other piece of parchment paper onto a baking sheet.
  • Add sliced apples to the center of dough, leaving a 1-2 inch border of crust showing.
  • In a small bowl, combine cinnamon, nutmeg, cornstarch, sugar and mix.
  • Sprinkle over top of apples.
