Ingredients Needed
- Apple. I like to use a tart granny smith apple but you can use your favorite apple.
- Granulated Sugar
- Flour. I like unbleached all purpose flour
- Butter. I use salted butter, you want it cold.
- Salt
- Cinnamon
- Nutmeg
- Cornstarch
- Ice Water
- Egg, optional, for putting an egg wash on pie crust.
- Coarse Sugar, optional, for sprinkling on pie crust after brushing with egg wash.
How to Make Apple Galette for One
- Combine flour, sugar and salt in a bowl.
- Add in cold butter, cut into small pieces.
- Combine ingredients with a fork or pastry blender until it resembles small pea size crumbs.
- Add in cold water a teaspoon at a time, start with just one and mix together until dough comes together. Use your hands to bring the door together in a ball.
- Roll out dough about 1/8 inch thick onto a piece of parchment paper with a rolling pin into an 6-8 inch circle.
- Place parchment paper on baking sheet.
- Cut apples into slices, about 1/4 inch thick.
- Combine cinnamon, nutmeg, sugar and cornstarch in a small bowl.
- Add sliced apples to the center of dough, leaving a 1-2 inch border of crust showing.
- Fold the crust up and around the apple filling, leaving the middle exposed. Make tucks in the dough as you fold it around the apples.
- Dot top of apples with 1/2 Tbsp butter
- Beat an egg and brush the dough with the egg. Sprinkle with a bit of coarse sugar if desired. This is optional, but makes for a shiny, golden brown crust.
- Bake at 400 degrees F for 20 minutes or until crust is golden brown.
- Serve with ice cream and caramel sauce, if desred.

- Be sure and cut apple slices into even thickness so that they cook evenly.

Apple Galette for One
Ingredients
Crust:
- 1/4 cup all purpose flour plus 1 Tbsp
- pinch salt
- 1 tsp sugar
- 2 Tbsp cold salted butter
- 2-3 tsp ice cold water
Filling:
- 1 apple peeled and cored and sliced to 1/4 inch slices
- 1/4 tsp cinnamon
- 1 pinch of nutmeg
- 1/2 tsp cornstarch
- 1 Tbsp sugar add 2nd Tbs if you prefer it sweeter
- 1/2 Tbsp butter salted
Instructions
- In a bowl, combine flour, salt, sugar and butter. Use a pastry blender or your fingers to combine the mixture until it resembles damp sand.
- Add in 2-3 tsp (a tsp at a time) of cold water until the dough comes together, you don't want it wet. Use your hands to bring the dough together.
- If the dough is too soft or sticky to roll out, wrap it in plastic wrap and refrigerate for 20-30 minutes.
- To roll it out, place the dough, flattened into a disc between two sheets of lightly floured parchment paper. Roll out with a rolling pin to about 1/8 inch thick.
- Remove top piece of parchment paper and place the crust on the other piece of parchment paper onto a baking sheet.
- Add sliced apples to the center of dough, leaving a 1-2 inch border of crust showing.
- In a small bowl, combine cinnamon, nutmeg, cornstarch, sugar and mix.
- Sprinkle over top of apples.
- Dot apples with 1/2 T bsp butter
