Hamburgers Teriyaki and Roasted Potato Wedges

We actually had a taste of summer here in Portland last week – a couple of 80 degree days!   I knew it wouldn’t last so we had to take advantage!

It was perfect BBQ weather!  Nothing tastes better than a home grilled hamburger.

Hambugers Teriyaki and Roasted Potato Wedges  

One of our favorite ways to fix hamburgers is a recipe I found in Southern Living’s Easy Weeknight Favorites.  A great cookbook full of quick and easy dinner ideas.  Their recipe for Hamburgers Teriyaki is quick and yummy.

I jazzed the hamburger up a bit by adding some grilled pineapple rings.  I bought a cored and peeled pineapple at the grocery store.

And then I cut it into rings.  Of course you could used canned pineapple rings too but fresh is always better!

Just follow the directions for grilled pineapple here.

I thought this yummy hamburger looked a little lonely sitting on the plate all by itself…

Hamburgers Teriyaki and Roasted Potato Wedges 

 so I added some roasted potato wedges.  I picked some fresh herbs right out of my garden to add to the potatoes ala Pioneer Woman

I think I used parsley, oregano, chives and some rosemary.  Dried herbs would work too.

As you may remember I am not a potato eater but I will eat these if they are nice and crisp!

My Mariner’s Garlic Fries would also be a great addition!

So fire up the grill and enjoy!

Hamburgers Teriyaki

1 1/2 pounds of ground beef

3 Tbsp teriyaki or soy sauce ( I used teriyaki)

1 Tbsp honey

1 tsp salt

3/4 tsp ground ginger

2 cloves garlic, minced

4 hamburger busn,  buttered and toasted

Lettuce leaves

Tomato slices

Grilled pineapple rings

Combine first 6 ingredients, shape into 4 patties.  Cook patties on grill.  Place on bun with tomato, lettuce, grilled pineapple and desired condiments.  Enjoy!

Waiting for some sun here, but wow–as soon as we get some dry weather, I’d love to give those a try. They look fabulous.

These are definitely going into my “to try” recipe folder. THANKS FOR SHARING such amazing recipes. We’ve had plenty of sun here in Phoenix–last week we even broke 100 degrees and it is only April. Look out summer!

I made your chocolate chip cookie pie yesterday (with an oatmeal pie crust) and it was AMAZING. Our friends devoured it with us while we enjoyed an episode of LOST :) Thanks for sharing it!

Okay, I have to be honest here: these burgers exceeded my very high expectations. They were FANTASTIC. I will be making them again–next week.
