We’ve taken the traditional English dessert and turned it into a creamy and delicious ice cream treat. A vanilla ice cream base swirled with strawberries and meringue cookies.

For this recipe I took my Eton Mess recipe and turned it into ice cream! It has all the components of the traditional English dessert including strawberries and meringue but instead of whipped cream you’ve got a creamy and delicious vanilla ice cream. And it works beautifully!
Ingredients Needed
- Strawberries. Eton Mess is traditionally made with strawberries but you could also use raspberries, blueberries or blackberries.
- Meringue Cookies. I used store bought cookies but you could make your own using this meringue cookie recipe.
- Sugar. Granulated sugar
- Whole Milk
- Heavy Whipping Cream
- Half and Half. If you don’t have half and half where you live, substitute with half whole milk and half heavy whipping cream. But if you can buy half and half I highly recommend using it.
- Vanilla Extract. Use a high quality pure vanilla extract for best flavor.
How to Make Eton Mess Ice Cream
- Place 1 1/2 cups of sliced or diced strawberries in a bowl. Add in 2 Tbsp of sugar. Stir to coat. Allow to rest for 10-14 minutes.
- Crush 9 of the 12 meringues in a bowl or plastic storage bag.
- Mix together milks, 1 1/2 cups of sugar and vanilla extract.
- Pour mixture into ice cream maker and process according to manufacturers directions.
- After ice cream is processed it will be a soft serve consistency.
- Add in half the strawberries, draining the juice and half the meringue cookies. Swirl through the ice cream.
- Place into an insulated ice cream container. Add remaining strawberries and meringue cookies on top. Use a knife to gently swirl into the ice cream or leave it sitting on top.
- Put ice cream into the freezer to allow it to firm up.
- NOTE: If you prefer you can puree the strawberries before adding them into the ice cream if you would rather not have chunks of strawberry in the ice cream.
- The meringue cookies will soften after added into the ice cream. They will have a marshmallow like texture.

Eton Mess is a traditional English dessert that is made of strawberries, meringue and whipped cream. History says Eton Mess was first mentioned in print in 1893 and it is believed to have originated at Eton College in England. It is served at it’s annual cricket match against Harrow School. And it is a perfect flavor of ice cream too!

Stored in an airtight, insulated ice cream container it will last for a couple of weeks.
Do I have to use an ice cream maker?
This homemade ice cream recipe is designed to be made in an ice cream maker and is not meant to be a no churn ice cream.

I use a Cuisinart 2 qt. ice cream maker. I then transfer the ice cream into this insulated ice cream container to let the ice cream harden up.
Can I use other fruit in Eton Mess?
It is traditionally made with strawberries but you can use your favorite berry or combination of berries such as raspberries, blueberries or blackberries.
