These Refrigerator Bran Muffins are healthy, delicious and so easy to make. The batter will keep in the fridge for 3-4 weeks so a fresh warm muffin is always just minutes away!

Why You’ll Love This Recipe!

You may have grown up with a Tupperware bowl full of Refrigerator Bran Muffin batter in your refrigerator. It is a classic recipe that has been around for years.

Not only are they a tender, moist, delicious and healthy, they are ready at a moments notice! The batter will keep for up to 3-4 weeks in the refrigerator.

They are perfect for those mornings when you have overnight guests and you need to feed them something and they are also quick to bake up in the morning while the kids get ready for school. They can have a fresh, hot muffin before heading out the door and your overnight guests will be amazed.

You can bake up as many muffins as you need at one time. If you don’t need a dozen, only bake up the exact amount you need with very little prep time and save the rest of the batter for later.

Ingredients Needed

  • Granulated Sugar
  • Vegetable oil or another mild oil such as canola or avocado oil.
  • Baking soda
  • Salt
  • Eggs 
  • All Bran Cereal can also use Bran Buds. I could not find All Bran Cereal, it may have been a supply chain issue so I used Bran Buds and they worked great.
  • 100% Bran Flakes
  • Buttermilk
  • Flour. Unbleached all purpose flour. You can also use whole wheat flour or a combination of all purpose and whole wheat flour.

How to Make Refrigerator Bran Muffins

  • Prepare muffin pans by spraying with non stick spray or using cupcake liners.
  • Pour boiling water over 100% bran flakes’ and let sit.
  • Cream oil and sugar together.
  • Add in buttermilk, eggs and hot bran to mixture. Stir to combine.

  • Add rest of ingredients into bowl and stir to combine.
  • Scoop into muffin tins. Use muffin liner if desired, otherwise grease the muffin tin well.

  • Bake at 400 degrees F oven for 20 minutes.
  • Store remaining batter in a large bowl with a lid in the refrigerator for 3-4 weeks.

Are Bran Muffins Healthy?

Bran muffins are full of vitamins, minerals, and other important things such as fiber thanks to the bran. Bran contains vitamin B, Iron, Magnesium, and Manganese. So as far as muffin recipes go, this is a healthy muffin!

Muffin Add Ins

  • Chocolate Chips (I prefer mini ones)
  • Nuts such as walnuts or pecans
  • Dried fruit like raisins or craisins.

Frequently Asked Questions

How do you store bran muffins?

After they are baked, you can keep them in an airtight container for up to 4 days. Store them in a single layer and place a paper towel on top. This helps prevent them from becoming soggy.

Can you freeze bran muffins?

To freeze them, be sure and cool them completely at room temperature. Place them in an airtight container or a zippered gallon size bag. Place in freezer for 2-3 months. Thaw over night or microwave for 30-40 seconds.

Can I double this refrigerator bran muffin recipes?

Absolutely, in fact the original recipe was double this but I found it was just too much for our family. This recipe makes
24 muffins.

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup boiling water
  • 2 eggs beaten
  • 2 cups All Bran Cereal can also use Bran Bids
  • 1 Cup 100% Bran Flakes
  • 2 cups buttermilk
  • 2 1/2 cups flour all purpose

Instructions

  • Pour boiling water over 100% bran flakes' and let sit.
  • Cream oil and sugar together.
  • Add in buttermilk, eggs and hot bran to mixture. Stir to combine.
  • Add rest of ingredients.
  • Scoop into muffin tins. Use muffin liner if desired, otherwise grease the muffin tin well.
  • Bake at 400 degrees F for 20 minutes.

Tips & Notes:

Note: Batter will keep in an airtight container in the fridge for 3 weeks.
If you need more muffins, you can easily double this recipe and get 48 muffins.
