Ingredients Needed
- Banana, half of a ripe banana
- Sugar
- Flour, I prefer unbleached all purpose flour
- Salt
- Baking Soda
- Oil. I use canola oil, you can also use vegetable oil or melted butter.
- Vanilla Extract
- Egg. You will only need 1 Tbsp of beaten egg,
- Mini Cinnamon chips or mini chocolate chips, optional
How to Make Banana Bread for One
- In a mixing bowl, place overripe banana, mashing with a fork,
- Add in dry ingredients, oil, vanilla extract and egg. Whisk or mix to combine.
- Stir in mini chips if desired.
- Grease a 6 oz. ramekin with non stick cooking spray and pour in batter.
- Bake at 350 degrees F for 18-20 minutes or until a toothpick comes out clean.

- You are only using half a ripe banana. You can freeze the other half of the banana and make banana bread for one again later or you can throw it into a smoothie! I always keep a stash of frozen ripe bananas in my freezer so I can enjoy this banana bread for one anytime!
- Instead of oil you can use melted butter but I always use oil and love the soft texture it gives the bread.
- You want your batter to be lumpy. Leave small lumps of banana in the batter, it helps make for a soft and tender banana bread. Don’t overmix!

What do I do with the remaining beaten egg?
The leftover beaten egg can be frozen. I like to use an ice cube tray and then store in a zippered plastic bag for the next time I crave some banana bread. You can also make one of my giant cookies with it! I have lots of recipes and ideas over on my Small Batch Big Taste You Tube channel that only use a tablespoon or two of beaten egg.
Can I make this in the air fryer?

Can I double this recipe?
You can double it or you can just use my small batch banana bread which is made in a mini loaf pan and is the perfect amount for two people.
What kind of nuts can I use in this recipe?
I would recommend using 1 Tbsp chopped walnuts or pecans.

Banana Bread for One
Ingredients
- 1/2 banana ripe and mashed

- 1 Tbsp sugar
- 1/8 tsp baking soda
- 1/2 Tbsp oil canola or vegetable oil
- 1 Tbsp beaten egg
- 1/2 tsp vanilla extract
- pinch of salt
- 1 Tbsp mini cinnamon chips or mini chocolate chips optional
Instructions
- Preheat oven to 350 degrees F.
