This banana bread for one is light, tender and so delicious. The perfect amount for one person and takes less than 30 minutes to make. Perfect for satisfying that banana bread craving without overindulging!!
1Tbspmini cinnamon chips or mini chocolate chipsoptional
Instructions
Preheat oven to 350 degrees F.
Grease a 6 oz. ramekin
In a bowl, smash ripe banana.
Add in all remaining ingredients and mix to combine. Don't overmix.
Pour into prepared ramekin
Bake for 18-20 minutes or until a toothpick comes out clean.

You are only using half a ripe banana. You can freeze the other half of the banana and make banana bread for one again later or you can throw it into a smoothie! I always keep a stash of frozen ripe bananas in my freezer so I can enjoy this banana bread for one anytime!
Instead of oil you can use melted butter but I always use oil and love the soft texture it gives the bread.
You want your batter to be lumpy. Leave small lumps of banana in the batter, it helps make for a soft and tender banana bread. Don't overmix!
