This easy Bacon Egg and Cheese Breakfast Casserole is the perfect way to greet your guests or your family in the morning. It’s a complete breakfast in one dish.
I love having overnight guests but I always struggle a bit with what to serve them for breakfast. I’m not a big breakfast eater myself and often don’t eat breakfast. But I have discovered that most of my family and guests appreciate breakfast. I love a good breakfast casserole because you can get a complete breakfast all in one pan! And this bacon egg and cheese breakfast casserole is always a huge hit with guests.
How to Make Breakfast Casserole
I love that I can mix this up the night before if I want and then just pop it in the oven in the morning or I can mix it up in the morning. This breakfast casserole has hash browns in it. One trick I like to use is to brown my hash browns before hand, it makes the potatoes a little crisper. I’ve got texture issues and don’t like soggy, mushy potatoes. I like to use the Hash Browns O’Brien, the ones that come with onions and peppers for extra flavor. My preference is the cubed hash browns but you can also use the shredded ones if you prefer.
After browning the hash browns, combine everything in a large bowl, the eggs, cottage cheese, potatoes, cooked bacon, cheese and seasonings. I use a combination of Swiss and Cheddar Cheese in this bacon egg and cheese breakfast casserole, but it would also be great with Pepper Jack! You can even switch it up a bit more and use diced ham instead of bacon. So many possibilities.
After combining all the ingredients, pour into a greased 9 x 13 pan. At this point you can bake it or if you are making it the night before, cover with plastic wrap and refrigerate until ready to bake. I like to let it sit out to warm up a bit before baking if possible, if not, just add on some extra baking time if it is put in the oven cold. Don’t worry if you don’t like cottage cheese, I don’t either. You won’t even know it’s in there. It just helps make it a little fluffier.
After this delicious bacon egg and cheese casserole comes out of the oven, it is ready for the table. A delicious complete breakfast all in one pan. Just add some fresh fruit and your family and guests will be delighted!

Bacon Egg and Cheese Breakfast Casserole
Ingredients
- 1 lb. bacon diced
- 1 cup onion diced
- 4 cups O’Brien cubed hash browns thawed
- 9 eggs
- 2 cups Medium Cheddar Cheese shredded
- 1 1/2 cups Swiss cheese shredded
- 1 cup small curd cottage cheese
Instructions
- In a large frying pan, brown hash browns until golden brown.
- Cook diced bacon and onion over medium heat until bacon is crispy. Drain grease.
- Place bacon and onion mixture along with browned hash browns and remaining ingredients in a bowl. Stir to combine.
- Pour into a 9 x 13 greased baking dish and bake for 45-50 minutes in a 350 degree F. oven. Be sure egg is set and cheese is melted.

Can you freeze this? After its cooked or even before in a baggie?

I have never frozen it, it might change the texture of the egg after thawing.
